A wonderful conversation led me on the journey to making a pad thai using our own Fork Fire sauces. I attempted to blend the traditional with the contemporary in the recipe and will show where you can simplify or substitute for ease at home.
✅ INGREDIENTS ✅
2 lbs. Chicken breast
2 large shallots(sub purple onion)
1 large bunch garlic chives (sub green onion)
1/4 cup peanut butter
1/4 cup Fork Fire marinade
1 package pad thai noodles
Fresh garlic 1 head
2 TBS corn starch
2 limes
Cooking oil
⬆️SIMPLE VERSION LIST⬆️
✅ ADDITIONAL INGREDIENTS ✅
2-3 carrots(1 cup julienned)
Red bell peppers or sweet peppers(1 cup julienned)
2 TBS dried shrimp
1 TBS fish sauce
2-3 TBS salted dried radish
1 cup fresh bean sprouts
2-4 scrambled eggs
Roasted peanuts for topping
Cilantro for garnish

🔪THE PREP🔪
Cut chicken breast into thin slices. Mix 2 TBS corn starch 1 TBS Fork Fire sauce 1 TBS WATER in a large bowl. Place chicken in bowl and coat with mixture. Set aside. Bring a pot of water (3 QTS) to low boil then turn off heat. add dry noodles to water, breaking into smaller pieces. Allow to sit, stirring occasionally for 20 minutes. Julienne cut your shallots and garlic chives (and your carrot and peppers if adding). Peel and almond slice garlic( 4+ cloves). Use a food processor to blend down 2-3 TBS of the dried shrimp to a coarse powder. Use food processor or rough chop 1/2 cup peanuts. Chop cilantro and cut lime wedges for topping and garnish. Mix 1/4 cup peanut butter and 1/4 cup Fork Fire sauce in small bowl.
🔥THE COOK🔥
Use a wok or large skillet with high sides. Add 3 TBS cooking oil to a pan on med high heat. Add chicken, sear until cooked and golden brown. Remove from pan and set aside. Add 3 more TBS cooking oil to pan. Reduce heat to med and add dried shrimp, fry until fragrant (30 seconds). Add shallots and stir fry for 1 minute, then add carrot and peppers, stir fry 1 minute. then add garlic and fry another 30 seconds. Turn up heat to high. Add drained noodles and sauce to pan, toss and coat noodles. Add garlic chives and bean sprouts, toss for 2 minutes and serve!
Top with peanuts, cilantro and lime! ENJOY❤️🔥

It may not appear to be much, but to us it is a whole new world. Our own space to operate out of and grow into. The combined efforts of our 3 person team tackling things on all fronts to reach our goal. But this isn't even our final form! We are just getting started here and we hope you will join us on our journey.

✅ INGREDIENTS ✅

4 ounces tomato juice
1/2 ounce lemon & or lime juice
1/2 tsp horseradish(optional)
1/8 tsp celery salt
1 -3 tsp Fork Fire marinade (how much kick you want)
1.5 oz vodka(optional)

Mix together and serve over ice with a celery stalk and some green olives. You can have it with no alcohol like me or make it as strong as you like!

Who would have thought, using a marinade for Bloody Marys? But if it works it works!

Anyone else have some crazy ideas for us to try?
