Seafood Chowder in Less Than 45 Minutes

A rich, creamy seafood chowder doesn’t have to take all day. Our premium extra virgin olive oil is the perfect way to add depth, freshness, and Mediterranean character to this comforting dish.
Ingredients:
3 tbsp OO&B Chilean Frantoio Extra Virgin Olive Oil, 1 tbsp butter, 1 diced onion, 6 cloves garlic, 2 diced potatoes, 3 cups seafood broth, 2 cups heavy cream, ¼ cup flour, and 1 lb mixed seafood—shrimp, scallops, and chunks of white fish.
Sauté the onion and garlic in the olive oil and butter. Stir in the flour, then gradually add the seafood broth and potatoes. Simmer until tender, gently poach the seafood, and finish with the cream.
For a lighter tropical twist, substitute some of the cream with coconut milk. Add blanched carrots, broccoli and chives for beautiful color and texture.
And if you love truffles, finish each bowl with just a few drops of OO&B White Truffle Oil. Simple, elegant, and on the table in less than 45 minutes. OO&B

NeIn 2006, Chile's olive oil industry was still in its early stages. That year, the country produced approximately 3,000 metric tons of olive oil from about 5,000 hectares of olive groves. Over the past two decades, Chile has emerged as one of the Southern Hemisphere's leading producers of premium extra virgin olive oil. Today, annual production typically ranges between 20,000 and 25,000 metric tons, depending on seasonal weather conditions.
In the most recent harvest, Chilean olive growers and millers celebrated a strong rebound, with production increasing by 33 percent compared with the previous year. As we celebrate Independence Day, it's worth reflecting on the enduring principles that shaped this nation.
The Preamble to the United States Constitution, drafted during the Constitutional Convention in Philadelphia in the summer of 1787, serves as the introduction to our nation's founding document. While it is not a source of governmental powers or individual rights, it clearly expresses the Framers' vision and the purposes of the Constitution.
The first objective they identified was to "establish Justice," followed by five other guiding principles that continue to define the aspirations of our republic:

"We the People of the United States, in Order to form a more perfect Union, establish Justice, insure domestic Tranquility, provide for the common defense, promote the general Welfare, and secure the Blessings of Liberty to ourselves and our Posterity, do ordain and establish this Constitution for the United States of America."

These 52 words remind us that the Constitution was created to unite the nation, uphold justice, preserve peace, provide security, promote the common good, and protect the blessings of liberty for future generations. OO&B- (Archives.gov)
