We made vegan cojita cheese for our New Years Eve Vegan Mexican Street Corn Salad! Basically, you salt-bake tofu, and the inside crumbles like cojita! And it's good! Ever since learning that Daya vegan cheese is the worst thing on the planet, discovering lactose free and vegan cheeses is awesome, and making them yourself isn't that hard! So far, we've made cream cheese from Greek yogurt, ricotta from almonds, and now cojita from tofu 😁
