We made vegan cojita cheese for our New Years Eve Vegan Mexican Street Corn Salad! Basically, you salt-bake tofu, and the inside crumbles like cojita! And it's good! Ever since learning that Daya vegan cheese is the worst thing on the planet, discovering lactose free and vegan cheeses is awesome, and making them yourself isn't that hard! So far, we've made cream cheese from Greek yogurt, ricotta from almonds, and now cojita from tofu 😁

Chocolate dipped pretzels! I followed a Pinterest tip, and melted my chocolate in the crockpot (definitely recommend)! There's peanut butter chips, white chocolate chips, and chocolate mixed with salted caramel chips. They're topped with crushed peppermint, mini chocolate chips, or sprinkles 😁

Stollen! Perfect for the holidays! Seasoned with cinnamon, cardamom, and nutmeg; filled with rum-soaked raisins, candied citrus peels, and almonds; stuffed with marzipan. Once its baked, you poke holes in it, liberally brush it with melted butter, and then generously top with powdered sugar. I started prep on this Sunday, and we finished baking it late last night. I had to wait ALL DAY before I could try some today. I'm happy to report it came out beautifully. I cant wait to bring this in to work tomorrow!

I'm gonna call this "Cheaters Rugelach". I had leftover puff pastry and leftover candied pecans, so I rolled it up and baked it, then drizzled some glaze on top. Came out pretty good! Rugelach can have a similar filling, but the dough is typically made with cream cheese. Cream cheese doesn't enter this belly anyways, so to me what I made is Rugelach!

Apple Roses for Thanksgiving! The petals look a bit dark, but the bake was good, and the taste was good! A puff pastry base, with candied pecans in the bottom (butter, brown sugar, maple syrup), a layer of apple slices, sprinkled with cinnamon sugar, rolled into roses, baked, then glazed with apricot jam!

Voodoo doll gingerbread cookies! We're definitely in the swing of fall now; there's a chill in the air, and Halloween is right around the corner! I worked on my costume today, and made these fun little dudes. I used pomegranate molasses in the dough, because someone did it on The Great British Bake Off, saying that it elevated the flavor, so I had to give it a try! I don't know if I can taste a difference, but they're good!

Outside it's pouring, but inside it's dry and fall spiced! We're using some more extras from the pantry this weekend, and today I made Fruity Fall Bread! Dried cranberries, dried plums, pecans, walnuts, applesauce, brown sugar, cinnamon, nutmeg, cloves, cardamom.... it smells and tastes amazing!
