Sushi Tasting nights we slow things down. We step away from the rush of the dining room and gather here at the sushi & raw bar, where everything is made in front of you—close enough to feel the rhythm of the knife, the warmth of the rice, and the story behind each piece. I keep things simple. No tricks, no over‑the‑top gastronomy—just clean technique, honest ingredients, and the kind of craft you can see right in front of you.
My sourcing begins here at home, along the Pacific Coast. I work with local fishermen who bring us seafood - shaped by cold currents, rugged coastline, and the seasons that define this place. My approach is simple and let the craft speak for itself. Every bite you’ll taste is shaped by the waters of the Pacific Northwest—its currents, its migrations, its quiet shifts from season to season. But our story also reaches across the ocean.
Some of the fish you’ll taste comes from the traditional waters of Japan— where sushi craft has been refined for generations. Bringing these two worlds together that we honor both: the coastline we live on and the traditions that inspire our work. This tasting moves with intention. Some pieces are delicate and bright, others rich and comforting, and a few are here simply because they’re too special not to share. Join me at the Sushi & Raw bar.
