If you missed our fliers, here's a brief background on the guac market and our game plan to shake things up.

83% of the guac market is controlled by one player: Wholly Guacamole. It was the first to open the door to store-bought guac, but since then, they’ve arguably stunted the market more than they’ve developed it.

You see, they took this preservation method called HPP, which uses tremendous pressure to vacuum seal foods, and renamed it “Fresherized”. It was new at the time and extended the shelf life of guac, but because of the pressure required, also destroyed the texture of the guac and reduced it to the consistency of baby food. Its success drew attention and it began to license the method out to competitors and soon, everyone was using the same bad preservation method.

The result has been a soft monopoly of low-quality guac and poorly designed preservation: whether Wholly Guacamole is selling their own product, or licensing out their service, they have a hand in almost any store-bought guacamole in the US.

That’s where we come in.

The Happy Avocado is a start-up that began with two friends who were fed up with seriously bad guacamole sold in grocery stores. We’re breaking away from this standard preservation that’s plagued the market. We’ve worked with Food Scientist experts at Cornell University as well as the former Director of R&D at Pepsico to develop a method that’s also commonly found in pasta packaging. It prevents guac browning and spoiling at the root of the cause: oxygen. We replace the oxygen in the container with a mixture of C02 and nitrogen, which keeps our guac fresh for up to two weeks while retaining that great chunky texture. Our goal is to change the way guac is thought about and consumed by bringing quality and creativity to the market.

With a passion for experimenting with creative guacamole combinations, we're introducing fresh, high-quality ingredients and guacamole infusions, starting with our mango guac, and later with fresh crab & lime guac, and roasted corn & cherry tomato guac.
Together, we're creating something totally new and revolutionizing the way people buy guacamole, but first, we need larger scale production in order to implement our preservation process.
