A look at a rib steak from our first 100% Wagyu steer; raised from embryo through finishing. 1750 # at 28mo, dressed @ 1060 #. In our opinion, good beef is a balance of genetics, diet, and environment. I firmly believe there IS such a thing as “too much marbling”. Too much and the deep rich beef flavor we all have come to love is lost and replaced with pancreas-hating buttery fat. I’d rather eat steak with a little chew that’s rich in flavor than a melted slab of butter with some strands of muscle in between. This wagyu hit the mark with exceptional balance between fat/muscle.
