We are so behind on our social media posting! I had to stop and say THANK YOU however for this absolutely beautiful review. We love what we call "repeat offenders". This family has been around long enough for us to have done high school, college, med school and wedding catering. .... and STOP IT, I'm the same age I was when we started!!! πŸ˜‚

This experience stretched me as a business owner, a chef, an experience curator and as a woman. It also blessed me in ways I have yet to process. To plan, prepare, manage and execute seven meals for these ladies during their retreat experience was an honor. There were more dishes than I considered but also more divine encounters. The old folks would say, I didn't know she had it in her. Me neither y'all!!! πŸ˜‚πŸ˜‚ I will always acknowledge it was NOT in me and my own abilities but THROUGH God s strength and his might. I promised my son I wouldn't over do the pain meds. I was so pleased to tell him I only took three bcs the entire time. Nothing stronger. Heading into my next challenge knowing I can. If you are looking for a life disrupting and defining experience, keep an eye out for the next one. Fullenterprise.org

Keeping the momentum.... Event Tip #3....

Skip the cake! A dessert bar or table offers the variety guests crave. If it's done right.... you will have something for everyone... gluten free, dairy free, diabetic. Have a small cake for the later celebrating at home. You can also do a faux cake. Just know they can be almost as expensive. The styrofoam cake blocks can be $60-80 depending on size before you add decorating materials and labor. Bottomline.... Most people only want a little something sweet after the meal. We use to see SO MUCH cake thrown away. Two bites and tossed.... right along with your money. πŸ™„

Event management tip #2.....

Do the cocktail hour BEFORE the ceremony!!!

Invite 6pm.... ceremony 645pm πŸ˜‰

That way everybody is ON TIME!! Because you are not walking in during my perfectly curated experience.

Was somebody still late even with a 40 min window, of course. πŸ˜‚ But it was only 3 people. I will take it!

Event management tip....

If you have over 75 people attending your event, request the caterer create two buffet lines, each double sided.

There is NO need for people to be in line for 15 mins to get food.

We move 150 people through the buffet in less than 20 mins total!!

Four lanes.... menu posted.... keep it moving for a more enjoyable experience overall. No table envy, no complaints and no one wondering if everything will be "gone".

Also, right before tables are released, we load the pans from the warming bags. That way there is no need for refilling during the first pass.

My goal is not just great food... it's a great OVERALL experience!
