This is your last chance to experience our Summer Menu at Ceremony.⁣

We’re open for dinner this Thursday, Friday & Saturday from 5–9 PM, with a small-plate menu designed to be enjoyed at your own pace. Order one plate or build your own progression. Come for a few bites, stay for dinner, or try a little of everything.⁣

Our summer menu is rooted in produce and the many ways we can interpret it. Expect house-made oils, sauces, seasonings, and other components that turn individual ingredients into something more layered and unexpected. It’s a menu built around technique, contrast and making as much as we can in-house.⁣

Reservations are open online for this week.⁣

Next week, reservations will pause as we transform the restaurant for our special Japanese-inspired tasting menu, Nigiri Week, September 10–12. That experience is available by messaging only.⁣

After Nigiri Week, our regular reservation system will be back online, along with our new Fall menu.⁣

Come close out summer with us.⁣

Cheers! 🥂 ⁣

For Nigiri Week, we’re pairing three bottles from Brooklyn-based Unified Ferments whose fermented tea beverages bring the complexity, acidity, and structure we love in wine while remaining completely nonalcoholic.⁣⁣
⁣⁣
The pairing begins with Kukicha, a Japanese green tea with a soft, savory character, gentle salinity, and bright fruit. It will accompany the welcome bite and miso soup.⁣⁣
⁣⁣
From there, the pairing changes depending on your nigiri selection. ⁣⁣
⁣⁣
For the vegan nigiri, we’ll pour Nilgiri Green. Its vegetal, savory character will work alongside the tomato, eggplant, mushroom, avocado, and tofu.⁣⁣
⁣⁣
The seafood nigiri will be paired with Jasmine Green, bringing floral aromatics and green fruit alongside the salmon, tuna, and torched black bass.⁣⁣
⁣⁣
We’ll finish with Wen Shan Bao Zhong, a softly floral, gently sweet fermented tea that will carry us through the yuzu granita and into our house-made vegan matcha ice cream with mandarin and black sesame.⁣⁣
⁣⁣
Nigiri Week beverage pairing · $24⁣⁣
⁣⁣
Nigiri Week runs September 10–12, with seatings at 5:30 PM and 7:30 PM and only six guests per seating. Reservation only. ⁣⁣

Introducing Nigiri Week · September 10–12⁣

For three nights only, we’re featuring a special Japanese-inspired tasting built around nigiri.⁣

Chef Jack will be behind the bar preparing each nigiri course by hand, with guests moving between the table and bar throughout the experience. We’ll begin at the table with a welcome bite of daikon, carrot and house yuzu dressing followed by miso soup. From there, join us at the bar for your choice of three-piece vegan or seafood nigiri, each prepared with wasabi. A yuzu granita with ginger and mint will refresh the palate before returning to the table for house-made vegan matcha ice cream with mandarin and black sesame.⁣

The vegan selection includes marinated heirloom tomato, eggplant and king oyster mushroom, and avocado and tofu. The seafood selection features salmon, tuna, and torched black bass.⁣

A second three-piece nigiri selection is available as an add-on, so you can try the other menu or revisit your original choice. We’ll also have an optional Japanese-inspired nonalcoholic beverage pairing to accompany the tasting.⁣

September 10, 11 & 12⁣
Two seatings nightly · 5:30 PM & 7:30 PM⁣
Six guests per seating⁣
$45 per person⁣

Our regular reservation system will be offline during Nigiri Week. To reserve, send us a DM or email and we’ll reply with a private reservation link to select your seating and pay for your tasting.⁣

Reservations are limited and payment is nonrefundable.⁣

We’re excited to share this one with you. ⁣If you missed our Christmas in July Menu, do not miss this one!

If you haven’t made it in for our Summer 2026 menu yet, now is the time.⁣

Our current menu brings together small plates designed to pair with our non-alcoholic cocktails, beer, and wine, with thoughtful, seasonal dishes that are approachable enough for a casual night out but interesting enough to make an evening of it.⁣

We’re already deep into developing our Fall 2026 menu, which we’re planning to roll out in mid-September. Before then, we’ll also be offering a special limited tasting menu during the week of September 10th, so our Summer menu won’t be available that week. We’ll share more about the tasting menu soon.⁣

If you’ve been meaning to visit, we recommend making it in this week or next while you still can.⁣

Walk-ins are always welcome, and reservations are available online through the link in our bio.⁣

We’d love to have you at the table before summer’s menu is gone.⁣

Cheers! 🥂 ⁣

Are we carrying your favorite non-alcoholic drinks?

Over the last year and a half, we’ve been rebuilding and refining our offerings to reflect the ever-growing world of non-alcoholic beverages. But with so many new products hitting the market, it’s impossible for us to try everything.⁣

So, if you’ve tried something you absolutely love and we don’t carry it, send us a DM. We want to know what we’re missing.⁣

A quick note on what you won’t find at Ceremony: flavored or sparkling waters, drinks containing THC or synthetic THC, KAVA, or other intoxicating ingredients.⁣

Otherwise, if there’s something you think belongs on our shelves, let us know. We’ll do our best to check it out.⁣

Cheers! 🥂⁣

Less Than and Ceremony will be closing early today at 5 PM as we take some time to celebrate Chef Jack’s birthday!

We’ve all been working tirelessly to create something special here, and we’re grateful for the opportunity to pause, celebrate, and spend some time together as a team.

Happy birthday, Chef!

💚🥂

More-than-human agency.⁣

There’s a lot we can take credit for at Ceremony. The recipes, the techniques, the service, the setting, the decisions that bring a dish or drink to the table.⁣

But we’ve come to believe that’s only half the story.⁣

These staff meals are a good example. Our chef starts with what’s in the fridge and an idea of where he wants to go. Then something else happens.⁣

Ingredients begin to harmonize. Acidity changes sweetness. Bitterness gives structure. Salinity pulls everything into focus. Texture creates contrast. Heat, time, fermentation, ripeness and chemistry all have a say.⁣

There’s a kind of symphony taking place between the table touches, too. Between the person who makes something, the ingredients that transform into something else, and the person who experiences it.⁣

This is what we mean by more-than-human agency: the belief that we are not the sole authors of what happens here. It’s an acknowledgment of the things outside of our control.

We can shape the conditions. We can make choices. We can pay attention. But we can’t fully control what emerges.⁣

And maybe that’s part of what makes Ceremony Ceremony.⁣

This week, make a reservation and see what we’ve worked hard to create, then experience the part that’s outside of our control, but is luckily in our favor.⁣

Cheers! 🥂 ⁣

What a lovely Sunday at Less Than + Ceremony. ⁣

We welcomed regulars stopping in to refill their essentials and pick up their zero-waste goodies, along with new friends, visitors, and neighbors just beginning their low-waste journey.⁣

At Ceremony, we met several new guests discovering us for the first time, sipping cocktails on and off the menu, grabbing a pastry, or settling in to get some work done.⁣

And then someone asked if we could put on a couple of records.

The crackle of vinyl. Nat King Cole and Sam Cooke in the background. Sips of Flora and Chardonnay. A quiet Sunday afternoon unfolding exactly as it should.⁣

Here’s a little cheat code some Ceremony lovers know: since we’re closed Mondays, on Sundays we pour samples of any open wine from dinner the night before. It’s a fun way to try something new and keep developing a sense of what you actually like.⁣

What a lovely afternoon. See you next Sunday. 🥂 ⁣

We’re looking forward to hosting you this evening, 5-9! ⁣⁣Cheers! 🥂 ⁣⁣ ⁣

Keep reading if you think vegetables can be the main event. ⁣🌱⁣
⁣⁣
At Ceremony, we’re building a different kind of dining experience in Norfolk: a modern non-alcoholic bar and restaurant where thoughtful food, creative drinks, and hospitality come together without alcohol.⁣⁣
⁣⁣
Our Summer 2026 menu starts with the produce itself. We’re highlighting vegetables and exploring how much can be expressed from a single ingredient through technique, texture, temperature, and housemade components. Sweet corn becomes velouté. Heirloom tomatoes meet whipped feta. Leeks, eggplant, beets, mushrooms, and carrots become composed dishes designed to make vegetables the focus rather than the side.⁣⁣
⁣⁣
The menu is vegetarian or vegan, with many dishes gluten-free or adaptable to be gluten-free. For guests who want protein, baked salmon and sous vide duck breast are available as optional additions.⁣⁣
⁣⁣
Dinner is served as small plates, rather than traditional appetizers and entrées. Dishes arrive as they’re ready, encouraging you to explore the menu at your own pace. We recommend three to four plates per person for a full experience, with options ranging from light and bright to rich and comforting, warm and chilled, familiar and unexpected.⁣⁣
⁣⁣
And then there’s the bar.⁣⁣
⁣⁣
Ceremony is a non-alcoholic bar, with a growing program of thoughtfully made cocktails, wine, and other drinks designed to be interesting on their own, not as substitutes for alcohol. Whether you don’t drink, are taking a break, or simply want something different, you’ll find the same attention to flavor and technique behind the bar as you’ll find in the kitchen.⁣⁣
⁣⁣
We’re a small, independent neighborhood space in Ghent, created around the idea that going out should still feel special without alcohol being the center of the experience.⁣⁣
⁣⁣
Dinner Thursday–Saturday, 5–9 PM.⁣⁣
