Big Sauce NFK

Big Sauce NFK Hot peppers from seed to sauce. Veteran Owned I took the advice from some growers online and planted 2 seeds per pot in hopes that at least 1 would sprout.

In February of 2023 I decided to TRY and grow hot peppers from seed, so I bought a small seed tray with a dome and a heat mat. I planted 4 yellow ghost, 4 red ghost, 4 scorpion and 4 scotch bonnet. Aaannnnddddd....a few weeks later EVERYTHING sprouted. If they all stayed alive, there was no way I would have enough room for 16 plants in pots on my small porch. I then decided that I was all in. I bo

ught a grow tent and a light, small pots, a fan, grow bags and fertilizer. For a month I watched them grow and panicked about how big they were getting. I did some research on how big the plants could potentially get and determined how big of a spot I needed to transplant them. I sweet talked a few people at work and was able to procure an 8 x 6 area out in the back and made an above ground bed from some old deck boards from a buddy who was tearing his deck down(great timing actually). I filled it with a cubic yard of mushroom blend soil. Let the transplanting begin!! I transplanted everything except 1 scorpion, 1 yellow ghost and 1 scotch bonnet , which I kept at home along with a Carolina Reaper that I bought a bit later . I also bought companion plants; Marigolds, Purple and White Alyssum, Basil and Rosemary. I bought netting to cover the bed and fiberglass poles to keep it up. After a month, I removed the netting and added 3 Kung Pao plants to the bed(they are similar to Cayenne). Fast forward to late August. All my plants were producing fruit. I made salsa with some and tried making fermented hot sauce (at least if it was fermenting I had more time to figure out what to do with all the peppers.) So, again, I decide I was all in on making hot sauce. I bought woozy bottles, sanitation spray, canning jars, a PH meter and a strainer. I made and bottled many different types of hot sauce and sent them off to friends that want to try them. Everyone, so far, has liked them and suggested trying to sell them. So, here we are....ALL IN.

Special request sauce for a 13 year old. "I want something citrusy with jalapenos" Working on a name for it.
Serranos, a tiny bit of chili de arbol peppers, Vidalia onion, tomatillos, Pineapple, Mandarin Oranges, cilantro, garlic, vinegar, salt, pepper. Great color, sweet and very mild. Sorry, no jalapenos.
Blistered the peppers, fried the onion and carmelized the pineapple.

Pequins are EVERYWHERE! 30k-60k scoville. They're the hottest I have this year.

The first pepper of the season is here! Not sure why it's so tiny, it's a plabano and they are usually much bigger.

Well, the peppers at Jardín de la casa are doing amazing. I have praying mantis's keeping the pests away and 3 of the 4 plants are over 3 feet tall and LOADED with flowers or peppers. My Guajillo is a monster, the stems of the peppers are HUGE. Not sure what to attribute it to, the dirt, the worm castings, mother natures abundant rain, my new cedar planter.... The mantis's?

Seeing peppers starting in my Pablanos, Chimayos, Serranos, Guajilos and Arbol. Flowers starting on the Pequin. Basil plants are as tall as the peppers and oregano is spreading nicely. My marigolds are blooming and the alyssum and yarrow look amazing.

I am growing this pepper this year and I'm hoping it's amazing. Very interesting article about the pepper and the town in the foothills of the Sangre de Cristo mountains. Powder from this pepper is priced at $45-$50 a pound for peppers grown in the town of Chimayo.

Unlike other chiles, the Chimayó chile is not produced commercially, and while you might find chiles from elsewhere labeled Chimayó, they are only true Chimayó chiles if they are certified as grown exclusively within the geographical area of Chimayó.

I had to relocate my "plot" that I started in 2023 and I think it will be ok. I upgraded to an 8X8 spot that hopefully will accommodate 16 plants. I also found a local guy that makes cedar planters and I bought one for the patio at home that I'm planting 4 peppers in along with some companion plants, garlic and basil, and to combat the pesky sun..... PLANT UMBRELLAS!
I'm still in the process of hardening the plants for my new spot, but here are some pics of the spot with the alyssum, oregano, Basil and yarro transplanted. It's been a process with some roadblocks, but the hard work is done. Hopefully next weekend the peppers are in the ground.

Well after a struggle to get some seeds to propagate, things are looking better. This year I'm not doing any super hots, I'm doing all Mexican peppers. Currently I'm at 24 plants that "popped".
6 pablano
6 serrano
4 guajillo
4 arbol
2 chimayo
2 pequin
Initially I started 32 seeds in February and only 4 came up. I started over at the end of March and 20 rose up. The single plant in the picture is the 1st one that decided to sprout, a chimayo. In naming it Chimiroqui after my daughter's favorite artist Jamiroqui.

Started seeds on the 9th:
Manzana, hatch, wiri wiri, guajilo, chimayo, pequin, serrano, arbol, pablano, and Aji.
Got my first sprout today 8 days later from the chimayo seed. Looking forward to this years peppers. I didn't start any super hots, I wanted to experiment with these Southwest peppers.
