I will be having my lambs processed either near the end of December or into January.
I have available 2 lambs and 1 mutton lamb
Lamb: Meat from young sheep (under one year old) More expensive, More tender, milder flavor
Mutton: Meat from mature sheep (over 2 years old) (MINE IS UNDER 2 YEARS OLD) Tougher, requires slow cooking, Stronger flavor.
You can buy either a half or a whole lamb.

These lambs have been grass raised, grass finished. The hay that they are fed during the winter is what I put up from my fields. Most of the year they are in the fields eating grass.
Deposits for a whole lamb is $75 for a half of lamb is $38.
You pay me for the hanging weight of the lamb and you pay the processor for the processing of the lamb. Price for the lamb is $5.75 lb hanging weight. For the older mutton lamb price would be $4.00 lb.
(that would be about $300 for a young lamb (usually between 50-60 lbs) and about $280 for the mutton lamb (guessing 65-75 lbs)
