Mraba Safarjal (Ω
Ψ±Ψ¨Ω Ψ§ΩΨ³ΩΨ±Ψ¬Ω) is a beloved traditional preserve that fills the kitchen with an incredible aroma. Made with just a few simple ingredients, this old-fashioned jam is perfect with bread, cheese, or simply enjoyed by the spoonful! π
π― INGREDIENTS
β’ 1 kg (2 lb 4 oz) quince, unpeeled
β’ 1 kg (2 lb 4 oz) sugar
β’ ΒΌ tsp citric acid (Hamod Allaymoun) OR ΒΌ cup freshly squeezed lemon juice
β’ 8 mastic gum pods, crushed with a pinch of sugar
β’ 1 tbsp freshly squeezed lemon juice, added at the end
π©βπ³ HOW TO MAKE QUINCE JAM
1οΈβ£ Prepare the quince
Wash the quinces well and pat them dry.
Cut each quince in half, remove the cores, then grate using the large holes of a box grater.
Add the sugar and toss everything together.
Cover and refrigerate overnight. π
2οΈβ£ Start cooking
Transfer the quince and sugar mixture to a heavy-bottomed saucepan.
Add the citric acid or ΒΌ cup lemon juice.
Bring the mixture to a boil, then immediately reduce the heat to low.
3οΈβ£ Cook slowly
Cook uncovered for about 1Β½ hours, stirring occasionally.
Keep the heat low and allow the quince to slowly soften and caramelize.
β¨ Youβll notice the quince gradually changes from pale yellow to a gorgeous pink-red color and the mixture becomes thick and jammy.
If you prefer your jam well-clotted and thick, let it cook a little longer until you reach your desired consistency.
4οΈβ£ Add the mastic
Crush the mastic gum pods with a small pinch of sugar.
Add the crushed mastic to the jam along with 1 tablespoon of freshly squeezed lemon juice.
Stir well, then remove from the heat.
5οΈβ£ Cool & store
Allow the jam to cool completely before transferring it to clean, sterilized jars.
Refrigerate and enjoy! π―β€οΈ
π Storage: When properly prepared and refrigerated, the jam can keep for up to 1 year.
