We fully endorse trying a new recipe! This here is a first for me, beef Wellington. Turned out lovely with our farm store tenderloin! I used the New York Times recipe-skip the pancetta, far too salty- keep everything else and far easier than you would think! Also buy local with for a savory center!

More Arlo but also our lovely older ladies. These gals aren’t used for meat. They were bred to an Angus or British white for our first round of beef cattle however this year they are just living their best life as happy grazers.
