PSA: please take eggs from the top. Digging to the bottom risks broken eggs and hurts the integrity of honesty. A broken shell means a broken bloom and this poses a risk to others. We want everyone happy and healthy.

Did you know there are a couple ways to preserve eggs for long term? We use 2 methods.

-First method is freezing. We take ice cube trays, spray them with no stick spray and crack eggs into each well. Freeze them and when they are frozen pop them into a freezer bag and they can keep in your freezer for up to 1 year!
- Second Method is Water glassed eggs. we take a large mason jar, we take as many of the cleanest unwashed (unwashed is key! you want the bloom in tact) eggs that will fit into the jar. Use Pickling lime and water. We do a ratio of 2 tablespoons pickling lime to 4 cups of water. Make sure your lime water covers the eggs entirely leaving an inch of head way at the top of your jar. Store these eggs in a cool dark place for up to 18 Months!

Though both of these methods are great for storing, the eggs are ideally consumed scrambled or in baking products. Watery yolks are ok and happens often in the water glass process. Do not consume cracked eggs for the egg substance may have been compromised. When in doubt throw it out. Hope you enjoy these homestead tips!
