Roasted Butternut Squash & Goat Cheese Stack
Ingredients
For the layers
1 large butternut squash, peeled and sliced into ¼-inch (6 mm) slabs
8 oz (225 g) goat cheese, softened
2 large onions, thinly sliced
2 tbsp olive oil
1 tbsp butter
1 tsp fresh thyme leaves
Salt and black pepper
For the topping
½ cup walnuts, toasted and chopped
⅓ cup dried cranberries
Fresh rosemary sprigs
Cranberry glaze
1 cup cranberry juice
2 tbsp maple syrup or honey
¼ cup dried cranberries
1 tsp balsamic vinegar
Instructions
1. Roast the squash
Heat oven to 400°F (200°C).
Brush squash slices with olive oil.
Season with salt, pepper, and thyme.
Roast for 20–25 minutes, turning once, until just tender.
2. Caramelize the onions
Heat butter and 1 tbsp olive oil in a skillet.
Cook onions over medium-low heat for 25–30 minutes, stirring occasionally.
Continue until deep golden and sweet.
3. Make the glaze
Combine cranberry juice, maple syrup, cranberries, and balsamic vinegar in a saucepan.
Simmer until reduced by about half and syrupy.
Cool slightly.
4. Assemble
In a small baking dish, create layers:
Roasted squash
Goat cheese
Caramelized onions
Repeat 3–4 times, finishing with squash on top.
5. Bake
Bake at 375°F (190°C) for 15–20 minutes until warmed through.
6. Finish
Drizzle with cranberry glaze.
Sprinkle with walnuts and cranberries.
Garnish with rosemary.
