The hint of smoke combined with our sticky glaze will be sure to wow your h a sharp knife. - Lay the Ham down flat and gently loosen the rind with your fingers, then carefully remove it. - Score the Ham in a crisscross pattern. - Add whole cloves to each square. - Place in the Smoker or BBQ set to roughly 130C cooking temp. - For the glaze combine 1 tbsp Dijon mustard, 1/2 cup bourbon, 1/2 cup honey and mix well. - Place the glaze in to the smoker next to the Ham and allow to thicken. - After 2.5 hours begin brushing the ham with the thickened glaze every 30 minutes. - After a total of 3.5-4 hours the glaze should be caramelised and the Ham should be measuring roughly 65C internal temperature. - Remove and allow to rest on the bench for 20-30 minutes. - Slice and atmeats
