Congratulations to the man who put a little farm on the map, made foraging wild fern and watercress worthwhile, inspired us to grow Italian greens, and taught us all about cardoons! I miss our early morning market chats and seeing our vegetables used so purely on your menus. We are forever grateful for your support and truly honored to be mentioned in your beautiful cookbook! About a year ago, I enjoyed an especially delicious meal at Galit. Today I made a day late (and ten pounds of sunchokes short) delivery there. Zach saw me talking to Tom and said “don’t leave yet, I have something for you”. He brought me warm, freshly fried latkes and dipping sauces and Andrés packed them up to go. I thought about the three of them on my drive home—their generosity and kindness in the midst of such challenging times. And then I thought of the many other chefs I have been so blessed to meet in Chicago, truly some of the very best people doing such amazing work. I’m thankful for them. ♥️
