Honey Nut Stir Fry
Ingredients: 1 lb. pork (cubed), 3/4 cup Orange Juice, 1/3 cup Honey, 3 tbsp. soy sauce, 1 tbsp. cornstarch, 1/4 tsp. ground ginger, 2 tbsp. olive oil (divided), 2 large carrots (sliced), 2 stalks celery (sliced), 1/2 cup peanuts (honey roasted, ground), Hot cooked rice
Directions: Cut pork into cubes or strips, set aside.
Combine orange juice, honey, soy sauce, cornstarch, and ginger in a small bowl, mix well.
Heat 1 tbsp. oil in large skillet, over medium-high heat.
Add carrots and celery, stir-fry about 5 minutes. Remove vegetables, set aside.
Pour remaining 1 tbsp. oil in skillet and add pork. Cover and simmer for about 10 minutes or until no pink remains.
Return vegetables into skillet, add honey mixture. Cook over medium-high heat, bring to a boil. Cook until sauce thickens, about 6 minutes.
Serve hot over rice. Add ground nuts on top (optional)
Makes 4 - 6 servings
