Large pot or Dutch oven
Instant Pot (optional)

🛒 Shopping List/Ingredients:
½ lb bacon, diced
1 medium onion, diced
3 celery stalks, sliced
3 cloves garlic, minced
1 tsp dried thyme
2 tbsp Better than Bouillon (chicken flavor)
2 chicken bouillon cubes
2 lbs potatoes (Yukon Gold = perfect), diced
5-6 cups corn (fresh off the cob is AMAZING, or frozen)
3 cups milk OR cream (half and half works too)
2 tbsp cornstarch

🔥 Stovetop Instructions:
Bacon & Flavor: Cook bacon, remove, leaving grease. Sauté onion, celery, and garlic until softened. Stir in thyme.
Soup Time: Add bouillon, potatoes, corn, and enough water to cover everything. Simmer until potatoes are tender (check them!).
Creamy Finish: Whisk cornstarch into milk/cream, stir into soup. Add cooked bacon bits, heat through.

🌟 Instapot Instructions:
Use 'Sauté' mode to cook bacon as above, then sauté veggies.
Add remaining ingredients, pressure cook (High) for 10 minutes. Quick release, then continue as on stovetop, blending if desired.

Notes:
For extra oomph, stir in cooked diced ham OR shredded rotisserie chicken at the end!
Crusty bread on the side makes it a meal.

🛒 Shopping List/Ingredients:

2-3 lbs lobster tails
2 tbsp olive oil
1 medium onion, finely chopped
3 celery stalks, finely chopped
3 carrots, finely chopped
4 cloves garlic, minced
1 tbsp fresh tarragon, finely chopped
1 tsp fresh thyme, finely chopped
2 bay leaves
½ tsp black peppercorns
¼ cup brandy
¼ cup dry sherry
2 cups clam juice
2 tbsp tomato paste
2 cups heavy whipping cream
1 tbsp cornstarch
Salt and freshly cracked black pepper to taste

🔥 Stovetop Instructions:

Prep the lobster: Bring a pot of salted water to boil. Add tails, cook for 3-5 minutes until bright red. Remove, cool, extract meat. Reserve shells.
Start the base: Heat olive oil in a large stockpot, add onion, celery, carrot, cook until softened. Add garlic, herbs, bay leaves, peppercorns, cook for 1 minute.
Deglaze: Add brandy and sherry, bring to a simmer, scraping browned bits. Cook until most of the liquid evaporates.
Lobster Shells: Add shells, clam juice, tomato paste, cover, simmer 30 minutes. Strain stock, discard shells.
Finish: Whisk cornstarch into some cream, then add to stockpot. Simmer 5 minutes until thickened. Add lobster meat, heat through. Season to taste.

Follow steps 1 & 2, using 'Sauté' function. Deglaze as in step 3.
Add shells, clam juice, tomato paste. Pressure cook (High) for 10 minutes, natural release. Strain as in step 4.
Finish the bisque by following step 5.

Notes:

For richer flavor, roast lobster shells at 400°F for a few minutes before simmering.
Garnish with chives or a touch more cream.
