As a kid growing up in Alice, South Texas, I was fortunate to have a front-row seat to the magic of barbecue. My mom, dad, and cousin Glen owned a honky-tonk on the outskirts of town, a place where music, family, and mouthwatering food converged.

On weekends, our family band would take the stage, filling the air with lively tunes. While we entertained the crowd, Glen would tend to the brick barbecue pit in the back, crafting a smoky brisket that was the stuff of legends. The intoxicating aroma would draw folks in from miles around, their stomachs rumbling with anticipation.

It was in that honky-tonk that I first experienced the artistry of slow-cooking meat over a wood fire. The tender, smoky brisket, a labor of love, was a taste of heaven. Those childhood memories are etched in my heart, a time of pure joy and simple pleasures. The smell of hickory smoke and the sound of laughter still transport me back to those carefree days. It was in that honky-tonk that I discovered my true passion: the art of barbecue.
