Emerald Pastures Farmstead Located in Wilkes County, NC. We produce forest-raised pork, raw honey, eggs, and all-natural balm using the beeswax from our bees and lard from our pigs.

Pro garden tip: give your mullein a lot more space than I did 😂 I knew it was large but was unprepared for just how big it could get! We did quite the haul this morning, though, so hopefully we will have lots of tea ready to go when cold season hits this year!

The farmer gets the leftovers, so jowl bacon is mostly what we eat at home… but we love it! This pack was pretty thickly sliced and was probably getting into the meat ends, but it is not all quite that thick. The jowl bacon has a rich, savory flavor that is perfect for soups, baked beans, vegetables, pizza, mac & cheese, potatoes… any recipe that incorporates bacon. Have you tried it yet? Let us know what you think!

We love using our sweet Italian sausage in pasta dishes because it has a rich, savory and herby flavor that pairs beautifully with marinara. The sausage isn’t exactly sweet; it just isn’t spicy like hot Italian sausage. But if spicy is your thing, you can always add some red pepper to your heart’s desire!
