Even in the middle of winter, there’s still plenty happening in our gardens. I’m doing some winter sowing right now and starting to plan ahead for late February, when it’ll be time to prune the berry bushes. These quieter months are perfect for dreaming, prepping, and getting a head start on spring.

In this video, I’m sharing an update on the winter sowing, one week after the containers have been placed in the garden, and what’s coming up next. It feels good to have a plan and something green to look forward to as the days slowly get longer.

It's Black Currant season! We have picked all our bushes and are currently processing the berries. Some will be frozen for our creme de cassis, syrup and hot sauces. Some will be dehydrated and turned into a great antioxidant powder and teas. Dehydrating them works great right now, although I believe freeze drying them would be best. I don't own a freeze drier, It is a goal of mine to get one. Let me know your thoughts? Do you own one, which one? and is it worth it?
Finally, we worked on the permaculture orchard this week, and it turned out great! 21 new black currant bushes were planted amongst pear and apple trees, and we sewed pumpkin seeds throughout the rows. Fingers crossed!

Today, I am making celery salt. On the left, the celery I dehydrated in my dehydrator and on the right, the celery that was dehydrated in the oven. The dehydrator was faster and maintained the color of the celery, and smells much better. Maybe it was user error with the oven method, IDK. I use the dehydrator all the time in the summer to preserve sweet and hot peppers, garlic, black currant, and herbs and turn them into powders, salts, or teas. Peppers get re-hydrated for soups, chili, and other recipes. The dehydrator I was a great investment, and helps us use all the produce we harvest, ensures we have plenty all year around, and saves freezer space.

Happy Wednesday! A lot is happening right now. We started Picking HUGE blueberries, beets and rutabagas. I tried growing rutabagas early this spring instead of the fall for the first time, and it was a big success due to the cool and rainy weather. While we wait for the black currants to ripen (So close! We start picking this weekend), we are starting the next project. We have a small orchard that has been placed on the "back burner" until now, and we plan to test some permaculture. The two apple trees will be pulled and replaced with 2 new ones, as they have been struggling... and I want to plant 20 black currant bushes of two new varieties we are trialing, and some pumpkins to keep the ground covered. The new black currant bushes were also an experiment. I rooted 6 inch bare branches early this Spring and they have really taken root. We are waiting for a bit of respite with the HOT weather to transplant. More to come on the progress. Stay cool!
