The End Cut comes from the vein end of the striploin and delivers excellent flavor at a lower price point. It's a great choice for weeknight dinners and reverse searing.

The Center Cut comes from the heart of the loin and is prized for its consistent marbling, thick cut, and steakhouse-quality presentation.

Neither is better. It all depends on what you're looking for.
