10 days. We fu***ng did it.

I don’t really know how else to describe the last 10 days other than saying it was probably the hardest thing I’ve ever done.

Going into our first Marshfield Fair, we knew it was going to be a challenge. What I don’t think we understood was just how much it would take. Cooking overnight, prepping in the morning, opening the window, serving all day, cleaning everything down, figuring out what we needed for the next day, reloading the smokers and doing it all over again.

Freedom Fire doesn’t have a restaurant behind it. We don’t have a big kitchen or a full-time staff preparing everything while we show up and serve it. This is Cassie and me, our trailer, our smokers, and a group of absolutely incredible friends and family who stepped in when we needed them.

And we needed them.

To every one of you who came into that trailer, put on gloves, took orders, made bowls, wrapped sandwiches, ran food, cleaned, stocked, prepped, or just helped keep us sane: thank you. There is absolutely no chance Cassie and I could have pulled this off without you.

And to everyone who came to the fair specifically to find Freedom Fire, came back a second or third time, told somebody else to try us, waited in line, posted about the food, or just stopped by to tell us you were proud of what we’re building: thank you.

There were moments this week where we were completely exhausted and running on fumes, but then we’d look out that window and see another line forming.

That’s something I’ll never forget.

We learned a lot. We made mistakes. We ran out of food. We made more. Then we ran out again. 😂

But we fu***ng did it.

Our first Marshfield Fair is in the books.

I’m tired. I’m sore. I don’t want to look at another pork butt for at least 24 hours.

And I’m incredibly fu***ng proud of this crew.

What an experience this has been.

When we signed up for our first Marshfield Fair, I don’t think we fully understood what we were getting ourselves into. 😂 Ten straight days of cooking, smoking meat, prepping, serving, cleaning, reloading smokers, grabbing a few hours of sleep, and doing it all over again.

We came here as a small family BBQ business trying to see if we could hang with some of the established vendors at a fair like this. What happened completely blew us away.

To every single person who stopped at our window, tried our food, came back for seconds, told a friend about us, posted about us, or just stopped by to say something kind: thank you. You guys kept us busier than we ever expected, and there were days we literally couldn’t make food fast enough.

But the biggest thank you has to go to the people in these pictures and the other friends who jumped in throughout the week.

We don’t have a restaurant kitchen and a giant staff behind us. At the heart of this thing it’s Cassie and me, and there is absolutely no way we could have survived these ten days without our friends showing up, jumping into a hot food trailer, asking what needed to be done, and working their asses off beside us.

You guys didn’t have to do that. You chose to. And I’ll never forget it.

We’re exhausted. We’re sore. We’re probably going to sleep for about three days. 😂 But more than anything, we’re incredibly proud and grateful.

Our first Marshfield Fair is officially in the books after tonight.

Thank you for believing in this little BBQ business of ours.

This is an incredibly difficult post to make.

Welch wasn’t just a supporter of Freedom Fire BBQ. He was our friend, and personally, he was one of the greatest friends anyone could ask for. Whenever we were open, you could count on him showing up, supporting us, sharing some laughs, and just being Welch.

He was truly one of a kind, and most importantly, he was a devoted father who loved his family.

Tragically, his life was taken far too soon because of another driver’s reckless actions. There are no words that can make sense of something so completely senseless, and there is nothing fair about the people who loved him now having to carry this loss.

We are asking the Freedom Fire family to please consider donating to help Welch’s family during this unimaginable time. If you cannot donate, please share this post and help surround his family with the same love and support that he always showed everyone else.

We love you, brother. You will never be forgotten.

This has been my view for six days now.

Wake up. Cook. Serve from 12–10. Clean. Reload the smokers. Go to bed. Repeat.

It’s been exhausting, but thankfully my wife has been right beside me absolutely crushing it. At this point, we’re happy, tired, delirious, sore, and incredibly thankful all at the same time.

The support we’ve received during our first year at the Marshfield Fair has made every long day and sleepless night worth it.

Six days down. Only four more to go. Let’s finish strong! 🔥

Ok... we have been dabbling in the kitchen again and may have gone a hair overboard on this week's special!

We made our own fajita seasoning, dusted one of our ground beef, ground pork belly, and garlic confit burger patties, buried some sauteed onions with it and then smothered it with some Mexican Street Corn (that we also made). We are serving it all on a buttered and griddled brioche bun and serving it with fries dusted with Tajin. C'mon-now.

For beverage pairings... well... the Margarita flavored frozen slushie and seltzer are obvious choices but we would also go with Eos, our new super-clean, super-crisp House Lager.

Don't forget!!

Thursday: 1/2 off pizzas

Last Thursday was a GREAT first night back at Hillside Johnny’s, so we’re running it back! 🔥🔥🔥

Freedom Fire BBQ is back at Hillside this Thursday, August 13th!

And after the response it got last week, there was no way we weren’t bringing back the FREEDOM FIRE BOWL. 🇺🇸🔥

Three smoked Texas meatballs piled over our creamy smoked queso mac, then hit with BBQ sauce, chipotle aioli, crispy onions, pickled red onions & jalapeños.

After this week, we’re packing up and heading to the Marshfield Fair, where you can find Freedom Fire BBQ August 21st–30th! 🎡🔥
