Had a wonderful trip to Woods Hole, MA and the Marine Biological Lab to drop off some lamprey. Got to explore some amazing projects going on related to lamprey and other marine research. The collective intelligence and passion for science ingrained in this community of researchers from all around the world is infectious. I can be a tight wound pessimist, but it was inspiring to see so much good work being done and so many great people willing to change the world for the better.

Then on Friday, I got to spend the day with one of the best striper guides in the game and throw some flies at a few early backwater bass. Quietly poling the flats in the sun, watching life unfold undisturbed in the largest Petri dish in the planet. Once again, the presence of true passion for engagement and conservation in nature was an inspiring thing to be a part of. The tanks are full for another summer of wild adventures and we are so grateful for the opportunity.

Ramps. Wild garlic. Wood leeks. Spring Onions. Our favorite wild forage. After all the whites and grays of winter, finally digging into the greens, purples, and dark browns that make up this wonderful harvest awakens our stiffened appetites.

In the coming weeks will use it fresh as much as possible and preserve it in pesto, pickles, and compound butter to add to recipes over the coming year. Slathered on chicken and rabbits, added to pho and ramen, dried and used for bbq rub, the possibilities are truly endless.

For the month of May, we are offering pork, rabbit, and chicken sausage made with fresh ramps to our custom customers. The intense but smooth garlic flavor adds a seasonal flair that echos with terroir. It also goes great with wild turkey 😉. 🦃 post to follow…
