My favorite thing to do when I move the sheep to a new paddock is to watch and listen to them graze.

Watching is fun because I like to see what plants they choose to eat - grasses, clovers, plantain or dandelion?

Listening is fun because there’s a constant munching rhythm as they rip the plants.

Any adventurous chefs out there?

My son told me about this Moroccan dish that he tried while he was in Spain a few years ago - and that it was really tasty!

And yes, it’s made with beef spleen…I’ll bring a couple to the Oxford Farmers' Market on Saturday in case I’ve piqued your interest!

A traditional Moroccan recipe for stuffed spleen. Calf or beef spleen is filled with a seasoned kefta and rice mixture and then roasted.

I’ve been rearranging meat in the freezers this afternoon while it’s been raining. I discovered I have a bunch of beef spleens! I have no idea how a person would cook them (or why?) but if you’re a fan of a dish made with spleen, give me a shout!

Oops! I forgot to post yesterday that I’m back at the Oxford Farmers' Market today, and am fully restocked with beef. Stop down to Lafayette Park before noon and check out what’s in the coolers!

Here’s the good news - the next time I’m at the Oxford Farmers' Market I’ll have a new supply of beef!

The bad news is it won’t be tomorrow - I have a fun family thing planned this weekend, so won’t be at the market. I’ll return August 8th with all your favorite cuts!

I’m excited to be back at the Oxford Farmers' Market tomorrow morning! It’s time to empty my beef freezers to make room for more, so I’ll bring what I have left - AND I’m offering $1 off per pound on everything except ground beef. (Most of what I have is larger items like roasts and brisket). I’ll also have my usual assortment of lamb cuts and sausages, as well as tallow-based Hand & Heel cream. Stop by to see what’s in the coolers!

For customers at Oxford Farmers' Market:

I will not be able to be at the market today (7/4) or for the next 2 weeks (7/11 & 7/18) due to personal commitments and Dairy Day.
