Hello, fall! 🍂 The first day of autumn calls for something cozy, and our Butternut Squash Soup is the ultimate comfort in a bowl!

Ingredients:
2 medium buttnernut squash, halved and seeded
2 tbsp olive oil (divided)
Salt & pepper, to taste
1 medium yellow onion, diced
1 large apple (Honeycrisp or Gala), peeled, cored, and diced
3 cups vegetable broth (or chicken broth)
½ cup heavy cream (or coconut milk for dairy-free)
½ tsp ground cinnamon (optional)
Fresh thyme or sage for garnish

Instructions:
1. Roast squash at 400°F until tender (30–35 min).
2. Sauté onion, then apple. Add squash and broth. Simmer.
3. Blend smooth, stir in cream, season to taste.
4. Garnish with herbs and serve warm.
