Manilena Cakes I have finally found out what my passion is. I love baking cakes, cupcakes and cookies and decorating them.

Working with my hands and creating wonderful goodies that people will love, seeing the smile on their faces, the amazement in their eyes - this is what makes me happy. So I claim to the universe, I will have my own successful baking business very soon. Successful enough to leave the rat race they call the corporate world and surround myself with the food that I love to create.

I have been doing her and her brother and sisters' cakes all throughout the years. I might've missed a few events here and there when I decided to take a hiatus. But I've always enjoyed making their cakes.

And now Lindsey is 13. Her past cake choices have always been so apt with her age - dora, hello kitty, unicorn. And this last one came from a funny frog trend in tiktok and instagram - she's definitely a teener now. (I had to make her frog cake topper via a cake pop technique.)

Her cake was made from vanilla chiffon. It is filled with real sliced strawberries and jam. The cake was covered in bridal blend-flavored swiss meringue buttercream. Her cupcakes were chocolate and ube swirled with the same buttercream flavor.

A better picture of my bibingka order. I had an order for 3 bibingka cakes that my client was supposed to bring out of state. Sadly, the restrictions and guidelines on what to do once you came back to MD made the travel a little burdensome. But who's complaining about having bibingka to eat anyway, if it's prepared like this and tasted divine?

And here it is - with all the toppings on it - butter, cream cheese, home-made salted eggs and dessicated sweetened coconut. Mind you, the bibingka has salted eggs and cream cheese already inside. So, this is THE ultimate!

It is wrapped and boxed up when you pick it up. The bread is so soft and yummy! It feels like having bibingka back home on a christmas night.

Ah, summer! The most difficult time to make cakes because, you know... the scorching heat and buttercream? They don't always play well together.

But I still try. It's a good thing my italian buttercream is stable despite the hot summer days - even for a party done outdoors.

And last week was a friend's 60th birthday and her decor theme was hawaiian. So here is a cake of ube and pandan layers together with iced with ube in one tier and pandan on the smallest tier with macapuno slithers in-between. The bottom tier is a mocha cake with coffee-caramel buttercream in it.

Except for the gold letters on the top, the happy birthday and the celebrant's name, all these are edible. How about that?
