Fava beans...the fruits of late spring! Here is a recipe with fresh, cool flavors for the warm weather!♡♡♡
Quinoa Salad with Fava & Mint
2 c quinoa, rinsed and boiled with 1/2 t lavender & salt, cooled
Dressing
1/4 c extra virgin olive oil
Juice of 1 lemon
1 T honey
1 t pink salt
1 t pepper
Salad
Cooked and cooled quinoa
1/2 red onion, chopped finely
2 c cooked fava beans
1/2 c fresh mint, roughly chopped
1 c sliced almonds

Mix dressing and set aside. Mix all salad ingredients. Combine dressing and salad ingredients until evenly distributed. Taste for seasoning. Refrigerate until use. Enjoy!!!♡♡♡
