El que imita fracasa- this Spanish phrase means - those who imitate fail.
The most precious memories I have are of my days in the Nicaraguan mountains with my grandparents ..wearing long rubber boots to protect me from the snakes and the muddy jungle . I still have the smell of sweet limes and the sugar cane on my nose and in my heart. I tear up the tomatoes into the rice and eggs just like my grandmother who for years I watched as she stood in front of the adobe fire. The smoke of the wood burning in the green mountains is forever rising in me and I am married to the scent of jungle rain . These memories ..the many baby animals I’ve held since I could touch are endless and so are the dreams- the poetry and colorful expressions that come from within are those of my people - because I am them and they are me . We are the carcajadas and the strength - the sorrow and the alegría. Not one of these can be replicated or imitated - just as the work from my hands ..the way I touch food and the energy that stems from only me. Be authentic - be original - embrace what you yourself have lived.

Amaranth was called huauhtli by our ancestors. It represented a vital nutrient as important as corn and it was also used in spiritual ceremonies. The Spanish colonizers banned it in an attempt to extirpate these spiritual practices. But today , I use the leaves freely and joyfully. In honor of truth and pain, I will grow it and my children will follow .

Cooking is similar to life - at times you may feel as though you don’t have much to work with ..you have to make choices , decisions , be creative , inventive , and confident . Once your perspective shifts you see you can make amazing things happen. Today’s breakfast- cinnamon, cardamom and oats pancakes -topped with mango and coconut nectar. For lunch - a flavorful mango , cashew fruit, and ginger drink . A side of garlic sweet potatoes paired with a delightfully nutritious salad made from mango, zucchini, cabbage and sun flower seeds . The dressing - orange juice , lime juice , olive oil and champagne vinegar. All done in 20 minutes and with a ton of love. Life is what you make it .

Do not apologize for being the human that you are . One thing I appreciate immensely about being away from the city is the opportunity to just be. I can remember many moments where I felt I had to “ look put together .” I had to “present “myself with intelligence when speaking in public and in work meetings . After introducing myself to someone , the first thing they wanted to know was “what college did I go to ?“ - sorry not Berkeley . I say to all that now- I don’t fu***ng try to be anymore ..I am what I am . The me from a far ass jungle town in the mountains of Nicaragua ..the one who loves to eat the tail and the head of a fried fish with my hands. I don’t need chairs when I have a dirt floor. I am the one who never wanted the free nose job from Kaiser because I look like my Mayan ancestors and I love the curves of my nose. I’m not trying to be a Rasta, I’m not trying to be cute , or to be a fine ass Instagram model. I don’t need a following behind me because I’m going to walk my path no matter what . Like me or hate me ..I’m not a gold coin anyways. It is a relief and a true moment of glorious freedom to say and to know -I don’t fit into your box and don’t need to .
