Does our mint catch your eye at market, but you’re not sure how to use it? My absolute favorite way is to add it to iced tea! It adds a bright, fresh flavor to whatever type of tea you like, and it takes only a few minutes to prepare.
1. Start a medium pot of water boiling.
2. While that gets going, wash mint under cold water, get out 4 iced tea bags or 9 regular tea bags (We use black tea, but again, pretty much any flavor works), and 1/3-1/2 cup of honey if you like it sweetened.
3. Once the water is boiling remove from heat, stir in the honey until dissolved, then add the tea and mint and stir a bit.
4. Let sit for at least five minutes, then give it another stir, remove tea bags and mint and pour into a pitcher, adding extra water to fill. I usually rinse the pot and dump that water in first to make sure I get all the flavor I can.
This recipe is for a standard one gallon pitcher.
