Maple Bacon Chicken

4 boneless skinless chicken breasts thawed
3/4 cup maple syrup
4 tsp lemon juice
1/4 tsp ground ginger
1 tsp soy sauce
Cheddar cheese shredded or sliced
4 slices bacon cooked

In a skillet, brown chicken on both sides and season with salt and pepper. Put into baking dish after browned and mix up the ingredients for the maple glaze which includes the syrup, ginger, lemon juice, soy sauce. Brush glaze on both sides of chicken and bake for 30 min on 350 degrees. When time is up, place bacon strips on each piece of chicken and sprinkle cheese on top of bacon and chicken. Place back in the oven to melt the cheese. It's so delicious and filling.

Hershey's Cocoa Cream Pie

I have made this for years and I can tell you, it's so easy to make and a crowd pleaser. It only takes a few minutes to whip together and the flavor is amazing!!

Ingredients:

1 9 inch pie crust baked and cooled
1/2 cup Hershey's Cocoa powder ( I really like the special dark)
1 1/4 cup sugar
1/3 cup cornstarch
1/4 tsp salt
3 cups milk
3 tblsp butter
1 1/2 tsp vanilla extract

Directions:

Prepare crust. Combine cocoa, sugar, cornstarch and salt in medium saucepan. Gradually add milk to dry ingredients, stirring until smooth. Cook over medium heat, stirring constantly, until mixture comes to a boil and then boil 1 minute.

Remove from heat, stir in butter and vanilla. Pour into prepared crust immediately. Carefully press plastic wrap directly onto pie filling. Cool and refrigerate 6 hours. Serve with whipped topping or your favorite whipped cream.

Here’s my recipe for the potato soup. It’s great anytime of the year, but for my northern friends, it’s just in time to warm you up!

Ingredients:

6 medium gold potatoes cut into 1/2 chunks
1/2 chopped yellow onion
1 can cheddar cheese soup
1 1/2 cups whole milk
Chicken bullion 2 cubes
6 slices bacon
1 scallion- green and white parts cut small for garnish
4 oz cheddar cheese (add more for garnish)
1 garlic clove minced up
2 cups water
2 tablespoons cornstarch
Salt and pepper

Directions:

In a large saucepan, (med heat) put 1 tablespoon olive oil and sauté garlic and onion until translucent- about 5 minutes. Add cornstarch and stir. Add the water and mix well so there are no lumps. When water starts to boil, add milk slowly to the water, stirring until incorporated. Add chicken bullion, cheddar cheese soup and potatoes. Cool until potatoes are tender on med heat. Meanwhile, fry up bacon and drain on paper towel. Chop up into crumbles (cheat and use real bacon bits of you have them!) cut up the scallions for garnish. Once potatoes are tender, add in cheddar cheese, salt and pepper to taste. I season generously. Then ladle out into your bowl, throw some extra cheese on the top of you want and add bacon crumbles and scallions. Viola! It’s stick to your ribs good!!

So just about everyone loves Tomato soup and Grilled cheese. It's a favorite of ages across the board. Here is my spin on plain old tomato soup from a can. My son used to beg me to make him and his friends "Mom's tomato soup". It's so easy and it tastes delicious. But just remember, the soup brand does matter. Only Campbell's Tomato soup makes it to my pantry.

What you need:

1 can Campbell's Tomato Soup
1 TBSP butter
Salt
Pepper
1/2 of the soup can of Whole Milk or Half and Half (I prefer half and half)

What you do:

Pour contents of soup into a saucepan, add all remaining ingredients and heat up. It's that simple and it is absolutely amazing. People will think you made homemade tomato soup. For fanciness, sprinkle some parsley or Italian seasoning on the top. In my family, we aren't that fancy.

'Tis the season for Parties!! I have a great party dip recipe that is so quick and delicious that it can be made in less than 5 minutes. You will be the hit of the party everytime!!!

CRABBY CHEESE BALL

What you will need:

1 8oz softened cream cheese
1 6oz can crabmeat
1 12oz jar of shrimp cocktail sauce
Crackers of your choice (My favorite is Ritz)

Directions:

With a fork, combine cream cheese and crabmeat. Shape into a ball. Place on a plate and freeze for 10 minutes or until hardened. Remove from freezer. Pour cocktail sauce on the top of the ball and serve with crackers. Will serve 10-12 people.

EXCELLENT SCALLOPED POTATOES

This recipe is something my mom used to make while we were growing up. Everyone loved her scalloped potatoes and now I make them. My husband loves them. They are super easy and great for Thanksgiving.

Ingredients:

8 oz shredded cheese (Sharp or Mexican Blend)
5 medium potatoes- unpeeled, just washed and scrubbed
1 can cream of mushroom soup
1/2 stick of butter
1/2 onion chopped ( I usually use yellow onion)
1/4 c milk

Instructions:

Preheat oven to 375. Cook potatoes until they are almost done but not quite. Drain and cool for 15 minutes. Cut the softened potatoes into slices, approximately 1/2" thick (or however you like them). Combine soup, milk and butter in a pan and heat until butter melted then add onion. Saute for 4 minutes. Spray a 6X9" baking dish with cooking spray and spread 1/2 soup mixture on the bottom of the dish. Add potatoes on top, with 1/2 the cheese and then pour remaining soup mixture on top and sprinkle with cheese. Cover and bake for 20 minutes at 375, then remove foil, and let the cheese brown on the top. YUMMY!!

CRACK CORN

For many Thanksgiving dinners, I have been asked to make corn. My friends started calling it Crack Corn, because once you start eating it, you have to take seconds! It's so easy, but so good. Canned corn can be used in substitution, but frozen corn is much better.

Ingredients:

2 bags frozen sweet corn (the kind you boil on the stove)
3/4 stick of butter
1/2 c milk
Pinch of salt
Pinch of pepper
1/4 cup sugar

Directions:

Cook corn in a large pot with water and the 1/2 c milk, following recommendations on package for cooking time (usually 15 minutes). Drain corn. Return corn to pot and stir in remaining ingredients. Mix well so that the sugar dissolves. Transfer to your serving dish or if making for a crowd, put in a crockpot on Warm setting and stir often so the corn does not burn.

Soon, you will be making crack corn and people will be jealous!!!!😊

HEAVELY HAM SALAD

1 pound chopped ham
1 small jar sweet gherkins
1/2 cup Duke's or Hellman's mayo

In a food processor add 1/4 of ham and 1/4 pickles (no juice). Pulse until combined and not chunky. Empty into a bowl and continue the same step until all ingredients are used. Add Mayo and stir to combine.

This is great for a sandwich or on crackers. My family loves my ham salad and have made it this way for many years.

This recipe will make approximately 4-6 sandwiches.

TRACY'S TERRIFIC DEVILED EGGS

What you will need:
6 hard boiled eggs- Cooled and cut in half with yolks removed to a bowl
¼ cup Duke’s or Hellman’s Mayo
2 TBSP yellow mustard
1 tsp apple cider vinegar
Pinch of salt and pepper
Paprika to sprinkle on at the end
Real Bacon Bits (You can use the ones in a bag or you can cook up some fresh bacon)

Directions:

Boil eggs in large saucepan until they come to a roaring boil. Remove from heat, put lid on and let sit for 20-25 min. Drain out water and fill pan with ice. Let eggs cool in ice for approximately 15 minutes and they will peel easily.

Cut eggs in half lengthwise and take out yolks. Place the whites on a plate or in a container. Place yolks in separate bowl that will be easy to mix ingredients together. Mash up yolks with a fork until smooth. Add the mayo, mustard, vinegar, salt and pepper. Mix well until completely combined. Take the filling and put into a sandwich bag. Squeeze out the air and cut a small opening at the corner. Pipe the filling into the eggs. Sprinkle each egg with paprika and add crumbled bacon bits on top.

Note: Double the recipe if you want to make 12 hardboiled eggs.

Variations:
Add chopped chives or dill to the top instead of bacon.
