Dinner at Captain Johnnie's house tonight. Here are the steps to a great crispy turkey that is so juicy that it falls apart in your mouth. I first took two sticks of margarine and partially pre-melted them in their own individual bowls. Then I took about 1/3rd of a bag of our "Winner of a chicken dinner" poultry blend and whisked it together in the one bowl with the margarine. I then took about 1/3rd of a bag of our " Without the pirates" of the Caribbean seasoning and whisked that together with the margarine in the second bowl.
I took the poultry seasoning and gently worked my hand under the skin of the turkey breast and got as much as i could of the seasoning under the skin ( about 3/4 of the bowl ), then gently rubbed the remainder onto the outside of the turkey breast.
I then placed the breast into our rotisserie and let it cook for about 35 minutes. At that time I then rubbed the Caribbean seasoning on the outside of the breast. I let it turn for about an hour then repeated the rubbing on the outside of the breast with the remainder of the seasoning. It was then turned for another 40 minutes on the rotisserie until the inner temp was at 165 degrees ( making sure that the thermometer did not touch any bone as this will throw off a false temperature reading ).
I then let the turkey rotate for an additional 12 minutes with no heat on and with the door of the rotisserie halfway open. When rotisserie cooking I consider this the "resting" time that most people will let the meat sit out on a platter or cutting board. I have done it both ways and believe me when you try and cook it the way that I explained up above you will not believe how juicy your meat will stay !!!!
I hope that the information is helpful to someone out there..........In no way shape, or form do I ever intend to talk down to anyone or to appear that I am explaining my methods to a child.I have no way to know if one is an accomplished chief or an eight year old child so I explain the best I can. I am not an accomplished chief.........just someone that is 54 years old and has enjoyed cooking for about 45 of those years.
As you can see below I will never win any awards for plating however the mashed sweet potatoes with hot pepper jelly and a touch of brown sugar along with the cranberry sauce didn't make Mrs. Captain Johnnie back away from the plain looking meal until it was gone !
