Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.

Cut in the cold butter using a pastry cutter or fork until the mixture looks like coarse crumbs.

In another bowl, whisk together cream, egg, and vanilla.

Pour wet ingredients into dry ingredients and gently mix until just combined.

Fold in blueberries carefully so they don’t burst too much.

Turn dough onto a floured surface and shape into a circle about 1 inch thick.

Cut into 8 wedges and place on the baking sheet.

Brush tops with a little cream and sprinkle with sugar if desired.

Bake for 18–22 minutes until golden brown.
