Fried Jerk Red Snapper
Ingredients
1 whole red snapper (cleaned and scaled)
2 tbsp jerk seasoning
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
½ tsp black pepper
1 tsp salt
Juice of 1 lime
2 sprigs fresh thyme
1 Scotch bonnet pepper (optional)
½ cup flour or fish fry coating (optional)
Oil for frying
For Garnish
Escovitch vegetables (carrots, onions, bell peppers)
Lime wedges
Fresh parsley or thyme
Instructions
Wash the snapper with lime juice and water, then pat dry.
Cut 2–3 slits on each side of the fish.
Rub jerk seasoning, garlic powder, onion powder, paprika, salt, and black pepper all over the fish and inside the slits.
Add thyme and Scotch bonnet pepper to the cavity of the fish.
Let marinate for at least 30 minutes (overnight gives the best flavor).
Lightly coat fish with flour or fish fry coating.
Heat oil in a frying pan over medium-high heat.
Fry fish about 6–8 minutes per side until crispy and golden brown.
Remove and drain on paper towels.
Top with escovitch vegetables if desired and serve hot.
