To tap, or not to tap...
We've been getting some questions about the timing of tapping, so here's a bit of an overview of what goes into the decision.

Sap generally "runs" (or flows) in maples when temperatures are above freezing during the day (40-45 degrees is about perfect) and below freezing at night (around 25 degrees is about perfect). The freeze thaw cycle creates pressure in the trees during the day; this pressure forces the sap out of the tap hole.

It generally takes a few warm days before the sap starts to flow. The risk in tapping early is that the tree begins to seal it's wound right away. This healing/sealing process takes several weeks and happens faster as temperatures warm. So, if you tap early, you likely will not get as much sap later in the season. But, there's also risk in tapping too late, there's only a limited window of sap flow, and you generally can't make up for missing early runs.

The timing of tapping doesn't really affect the trees. The wound is the same regardless and the trees are good at healing and protecting themselves. A mature maple contains thousands of gallons of sap and over 1,000 pounds of sugar. During the season, we collect about 15 gallons of sap with about 4 pounds of sugar, a tiny fraction of what's in the tree.
