Schrum's Yums Cooking & Baking...homemade-style. :) This site will be dedicated to posting healthy recipes for cooking and baking.

Most recipes are my own, but some are found from other publications and will be given credit for their recipes. In general, my hope is that people who decide to try some of the recipes will tell what they liked about it, how they would change it to fit their preferences, and be a place where questions and answers can be posted regarding the topic. You can also post requests for recipes that you would like to find healthy alternatives for without sacrificing flavor or taste.

Sometimes all it takes is a few simple modifications to make a regular baked good a little more "waist friendly". Check out how I modified this recipe.

Double Chocolate Walnut Bread
**modifications in ( ).

1 box chocolate cake mix of choice

1 box instant chocolate pudding (sugar free)

4 eggs (2 whole eggs, 3 egg whites)

1/2 cup vegetable oil (1/2 cup unsweetened applesauce)

1 cup very warm water

1 cup semi sweet chocolate chips (⬇to 1/2 cup of same ingredient)

1 cup chopped walnuts (can omit if you'd like)

Oven temp: 350Β°

Mix together cake mix through warm water until combined. Stir in chocolate chips and walnuts. Pour into greased bread pan. Bake for 35-45 minutes or until toothpick inserted into the center comes out clean. Cool on rack for 10 minutes.

With fall coming, all I can think about is pies. Apple pies, berry pies, pumpkin pies, pecan pie, you name it! These are definitely some amazing (and by the looks of it, pretty easy) ways to "spice" up the look of the pie crust. Thank you for bringing this to my attention, Beckie!

Michon and I are both huge fans of pizza. I love that it is crispy, cheesy, savory, garlicky and just all around delicious. What I don't like about pizza is it his very difficult to eat it in moderation. Luckily, Michon had posted a recipe for "Deep Dish French Bread Pizza" and I decided tonight was a great night to try it. Both Mike and I loved it and I hope you do, too. I made some changes to the original recipe to make it a bit healthier, but nothing uncommon or scary. It takes about 30-35 minutes from start to finish. Give it a try!!

Ingredients:

Sauce
1 can (14.5oz) crushed or petite diced tomatoes
1/4 cup onions, diced
1/4 cup green peppers, diced
2 tsp ground oregano
1\2 tsp salt
1/2 tsp pepper
1-2 Tbsp red wine vinegar

Place all ingredients into a saucepan. Cook over medium heat until simmer. Simmer 15-20 minutes or until thickened.
Meanwhile, prepare fillings.

4-6 French bread rolls or hoagie buns
1Tbsp Canola oil
1 # ground turkey
Salt and pepper
Turkey pepperoni
Mozzarella cheese (I used cheddar-jack, shredded)

Cut top third of buns off and peel out the inner bread. Be sure to leave enough bread around the edges so the fillings do not leak out. Cook the ground turkey in a skillet with the canola oil (I also added onions, green pepper, a pinch of garlic, and a half pinch of crushed red pepper). Cook until browned.

Now...assemble. Layer in the following order: bread, sauce, ground turkey mixture, turkey pepperoni, cheese. The cheese should only be slightly taller than the bread.

Bake at 400* for 15-20 minutes or until cheese is bubbly and bread is toasted. Enjoy everyone! :)

I managed to squeak out another recipe for Michon tonight.

Slow Cooker Apple Oatmeal

2 # tart apples (about 5), peeled & cut into 1" pieces
3/4 cup brown sugar
1 Tbsp cinnamon
1/2 tsp nutmeg
1 tsp apple pie spice
1 Tbsp vanilla
1/2 tsp salt
2 Tbsp lemon juice
2 cups rolled oats
2 cups milk
1 1/2 cups water
3 egg whites

Grease 3 qt slow cooker. Toss together apples through lemon juice. Add oats and mix again. Transfer to slow cooker. Whisk together milk, water, and egg whites; pour over apple mixture. Cook on low 6-8 hours or on high 3-4 hours. Serve warm.

This is the one that started it all...pickled cherries.

2 # sweet cherries (bing cherries)
2 1/2 cups red wine vinegar
1 1/2 cups granulated sugar
2 Tbsp kosher salt
2 wide strips orange zest
1 tsp black peppercorns
1 Tbsp coriander
2 cinnamon sticks
1 bay leaf

Poke cherries with a fork; place cherries into jars...you might need to smash them down a bit. Whisk remaining ingredients in a saucepan and bring to boil. Boil for 10 minutes; remove from heat and let cool for 10 minutes. Submerge cherries with brine. Seal jar with kid and refrigerate. Good refrigerated for about one month.
::::::CAUTION:::::: These cherries are quite potent, so I would recommend chopping them up and spreading them on bread to accompany a chicken or turkey sandwich.

Last week I had a wonderful friend pass away from gastric cancer. Michon spent the past year of her life looking at wonderful recipes that she would like to try, but was unable to enjoy due to getting her nutrition through her port. One of her last requests was for me to make a recipe for pickled cherries and I was literally minutes late delivering them to her before she passed. So, in honor of my friend, I will start making some of these recipes in honor of her.

Cheesy Skillet Black Bean Rice!

What you'll need: 2 Tbsp olive oil, 3 garlic cloves, finely chopped, 1 small yellow onion, finely chopped, 2 pkgs microwave brown rice, 2 Tbsp tomato paste, 1 tsp chili or cayenne pepper powder, 1 tsp paprika, 1/8 tsp each salt and pepper, 1/2 cup water, 1-15 oz can reduced sodium black beans, rinsed & drained, 1 cup reduced-fat Colby-Jack cheese.

What you'll need to do: Heat olive oil over medium-high heat. When hot, add onion and garlic; sweat until translucent. Add tomato paste and water; whisk together until smooth. Add spices and rice; stir until combined. Add black beans; stir to combine. Fluff rice and bean mixture with fork. Sprinkle cheese over top and cover with lid. Reduce heat to low and allow cheese to melt.

Serving suggestion:
Serve over the top of lettuce and top with sliced black olives, salsa, and cilantro-lime Greek yogurt (combine non-fat plain Greek yogurt with 1-2 Tbsp lime juice, 2-3 Tbsp chopped fresh cilantro, and pinch of salt).

Raspberry cheesecake fluff!! What you'll need: 1 pkg. instant cheesecake pudding, 2 cups milk, 12 oz. frozen raspberries, thawed, 1/2 cup sugar, 1/4 cup cornstarch, 1 tbsp lemon juice, 1/4 tsp salt, 1/4 tsp cinnamon, 1/2 cup water, 1 tub light whipped topping, 2 pkgs graham crackers, 3 tbsp butter. What you'll do: in a medium sauce pan, whisk together the sugar, cornstarch, salt and cinnamon together. Add lemon juice, raspberries, and water to sugar/cornstarch mixture; stir until smooth. Cook over medium heat until thickened, 5-10 minutes, stir frequently. Once thickened, remove from heat and cool completely. Meanwhile, whisk pudding mix and milk together for 2 minutes. Refrigerate until set. Pulverize graham crackers in the food processor until crumby consistency. Melt butter and drizzle into graham cracker crumbs. Fold cooled raspberry mixture into pudding, then fold whipped topping into the mixture, and fold graham cracker crumbs into the mixture. Refrigerate the fluff until ready to serve. Enjoy!
