Oh Honey! BBQ Chicken Salads
The perfect quick and easy salad uses pre-made Makin' Magic Chicken to get dinner on the table in less than 30 minutes.
Ingredients
¼ cup 2% milk
½ cup mayonnaise
1 packet Tastefully Simple Oh Honey! BBQ Dip Mix, divided
2 cups prepared Tastefully Simple Makin' Magic Chicken(recipe below), thawed if frozen
2 tablespoons olive oil
18 ounces chopped Romaine lettuce
24 grape tomatoes, cut in half
1 medium cucumber, sliced
1 cup shredded mild Cheddar cheese
¾ cup seasoned croutons
Directions
In small bowl, whisk together milk, mayonnaise, 1 tablespoon Oh Honey! BBQ Dip Mix; set aside.
In medium bowl, combine Makin’ Magic Chicken, olive oil and remaining Oh Honey! BBQ Dip Mix. Toss to coat; set aside.
Divide lettuce among 6 large salad bowls or dinner plates. Top with tomatoes, cucumbers, cheese, croutons and chicken. Drizzle with desired amount of dressing.
Tip: Refrigerate remaining dressing in a container with a tight-fitting lid up to 2 weeks.
Makes 6 servings.
Make Ahead & Freeze: Prepare step 2 and place in quart freezer bag. Place remaining Oh Honey! BBQ Dip Mix in quart freezer bag. Place cheese in quart freezer bag. Place all bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
Makin' Magic Chicken
Perfectly seasoned magic chicken in your slow cooker - freeze it in 2-cup packs so you have it ready for easy meals.
Ingredients
4 pounds boneless skinless chicken breasts and/or thighs
2 cups water or no/low sodium chicken broth
6 tablespoons Tastefully Simple Makin' Magic Chicken™ Seasoning
Directions
In a 4-quart or larger slow cooker, combine all ingredients, sprinkling each layer of chicken with seasoning.
Cook on LOW 5-7 hours.
Chop or shred chicken; toss with liquid in slow cooker. Divide among 4 (1-quart) freezer bags (2 cups per bag). Freeze, if desired.
Makes 4 (2-cup) portions or 16 (½ cup) servings.
Serving Suggestion: Thaw prepared chicken and use for casseroles, stir in any of our sauces for a pulled-chicken sandwich, top salads, the ideas are endless.
Multi-Cooker Option: Prepare step 1 in 6-quart or larger multi-cooker. Set to Pressure Cooker on HIGH for 15 minutes. When done, allow a 10 minute natural release, then continue with a quick release of pressure. Continue with step 3.
