Last week I dehydrated 25lbs of sweet onions. After conditioning them for a few days I ran them through a spice grinder and ended up with 5 half-pint jars vacuumed sealed in the chamber vac. Rick Bunch

Busy week at TCC for the Cajun and for home. Started Monday by mixing up cracker dough, canned 24 pints of Crunchy Slaw, started rendering about 50lbs of hog fat and started running 25lbs of onions through the dehydrator and hung 25 lbs of onions to dry a bit for storing them.. Tuesday brought a day of more kitchen work baking crackers, more hog fat, and 0more onions. Wednesday I finished up the hog fat, packaged the crackers, and started canning tomatoes and cooking down several quarts of blackberries. Thursday morning was spent with my mother-in-law, Louise Bunch, running some errands and just enjoying the time together, then home to start last dehydrator of onions, canned another cooker of tomatoes and straining the blackberries (they are in the fridge dripping) and cleaning the kitchen. Total for the week: 22 bags of cheese Crackers, 24 pints of Crunchy Slaw, 12 qts and 1 pint of tomatoes, 40 lbs of lard, 25 lbs of dried onion that will be turned into onion powder, 25lbs of onions forfuture use and blackberry juice, not sure how much yet. Busy season has started. Rick Bunch
