America 250: 1920s-1930s

Before dry yeast packets became commonplace, home bakers often relied on fresh compressed yeast sold in small, wrapped cakes. 🍞🌾

During the 1920s and 1930s, these small packages of fresh yeast were a familiar sight in American grocery stores. They gave home bakers a convenient, consistent source of yeast for making bread, rolls and other yeast-raised favorites.

Commercial yeast had already been available for decades, but these familiar little packages became part of everyday home baking during an era when Americans were embracing more convenient and standardized baking ingredients.

America 250: 1920s

As wheat production grew, small community grain elevators became a familiar sight across rural Oklahoma. 🌾

These elevators gave local farmers a place to deliver and store their wheat before it continued its journey to millers and markets. Many became landmarks along Oklahoma’s railroads and in agricultural communities.

Some of those old elevators are still standing today. Where have you spotted one? Tell us the town in the comments!

America 250: 1917-1930

Ever wonder who made sliced bread possible? 🍞

Former Iowa jeweler Otto Frederick Rohwedder set out to create a machine that could slice an entire loaf evenly. His first version was destroyed in a factory fire in 1917, but he didn't give up. By 1927, he had developed another bread-slicing machine.

In 1928, Missouri's Chillicothe Baking Co. used Rohwedder's machine to market the first commercially sliced loaf of bread to the public. Just two years later, Wonder Bread helped popularize sliced, packaged bread nationwide.

A simple idea transformed the way Americans bought and ate one of their most familiar wheat foods.

World War I dramatically increased demand for American wheat. 🌾

As the United States worked to supply troops and allies overseas, wheat exports surged — including wheat grown in Oklahoma. Bread and other wheat foods were essential for feeding soldiers serving far from home.

This 1918 photo shows the U.S. Army 313th Bakery Co. in France. Its bakery had the capacity to produce an incredible 36,000 pounds of bread per day.

America 250: 1910s

The way Americans bought bread was beginning to change. 🍞

During the 1910s, industrial bakeries expanded and packaged loaves of bread became increasingly common in grocery stores. Instead of baking every loaf at home or buying from a neighborhood bakery, families had another convenient option for putting bread on the table.

It was part of a larger shift in how wheat moved from the farm to the foods Americans ate every day.
