KOMBUCHA is the western name for a sweetened tea that has been fermented using a kombucha culture, a symbiosis of Acetobacter-species & yeast cultures. Like mother of vinegar or other traditional ferments, this kombucha "mushroom" or SCOBY (Symbiotic Culture Of Bacteria & Yeast) is a living, self-reproducing organism; as the brew ferments, it literally "eats" & metabolizes the sweet tea mixture, c
onverting sugar & caffeine into other compounds via a combination of acetic, lactic-acid, & glucoronic fermentation. The starring ingredient in Magic Kombucha is Olympia, Washington's world-famous artesian well water. Along with the local wild yeasts and friendly microbes that feed the culturing process, using artesian water really ties our booch to The Land beneath it. We are convinced that IT'S THE WATER that makes Magic truly MAGIC. We want to put Olympia's water back on the map! Our ingredient list is simple: raw kombucha made from local artesian well water, organic green tea, and organic evaporated cane juice. Our tea comes from a socially-conscious local supplier, and our evaporated cane juice from an all-organic, fair-trade-certified company that is dedicated to fostering sustainability among sugar farming co-ops. RADICAL. We buy our bottles from a local bottle factory less than 10 miles from our warehouse. Polyethylene terephthalate (PET) plastic does not contain bisphenol A or phthalates, and research has shown that the plastic in PET bottles is inert and does not leach harmful materials into its contentsβeither when a beverage is stored unopened, or when bottles are refilled or frozen. Please reuse our bottles, and recycle them when you're done! We brew in small batches. We fill, cap, and label each bottle by hand. Each of our kombucha tubs have names.
