Dan’s Restaurant of the Week: Lazy Buffalo Omaha

This tiny joint is cranking out some of Omaha’s best BBQ. Don’t expect giant platters of pulled pork and brisket, though. Lazy Buffalo specializes in smoked meat creatively incorporated into sandwiches. Oh, and the ribs are, in my opinion, as good as any in Omaha.

If you agree, you should check out The Best Nest Fest! Hosted by Best Nest Farm, an idyllic glamping spot in Glenwood, Iowa, this day will be filled with fun, food, drinks, and community. This statement might make you think I’m a madman, but here goes: one of Omaha’s better burgers comes from a sushi restaurant.

That might sound crazy. It did to me. But when you have the smash burger at Shiki (4900 Dodge St), I think you’ll see what I mean.

This new Omaha restaurant has gotten a lot of buzz for its sushi, but when a palate I trust (let’s just say he owns my favorite pizzeria in Omaha) told me he gets the burger at least once a week, I had a target acquired.

First, the beef. Despite being smashed on the flattop, it remains juicy and very full of rich, beefy flavor. The patties are lacking that perfect Maillard reaction and crispiness, but they’re nicely caramelized, and the milky cheese creates a brilliantly creamy blanket for them. With sweet caramelized onions and a squishy, soft potato bun, Shiki could’ve stopped here and had a solid burger.

But it’s the sauce work that puts the burger over the top. There are 4 sauces(!) here, which initially struck me as too much, but they work well together. The tartar sauce is zippy and tangy, working well with the vegetal cilantro sauce. The habanero mayo gets completely lost, but the brown butter finish adds a rich nuttiness that had me legitimately sad when I was down to my final bites.

The fries were nice and fluffy but needed seasoning. A side car of the tartar sauce to dunk them in would’ve been perfect.

I already had a date planned to get sushi and sashimi at Shiki, but my friend’s claims about this burger warranted a visit ASAP. And just as he did for me, I hope I point you toward a visit to Shiki.

The life of a restaurant owner is not an easy one. While it may seem idyllic in concept, the challenges stacked against restaurant’s success make it incredibly difficult to survive, much less thrive.

So why do people do it?

To dive into the topic, I put together a panel of elite Omaha restaurant owners: Paul Urban (Block 16), Katina Talley (Sweet Magnolias Bake Shop; Know Good), and Ben Maides (Au Courant). These 3 not only shed a light on all the roadblocks restaurant owners face (razor-thin margins, staffing, rent, and the bevy of non-food responsibilities, to name a few), but also discussed what, despite all the difficulties, keeps their love for restaurant life alive.

I’m always down for some saucy nuggets, and when Runza Restaurants announced they were releasing new Saucy Popcorn Chicken today, I had a 2-word response:

“Say less.”

The quality of the chicken was high, as it was still pretty moist. The batter/chicken ratio is nearly 50/50, but that’s ok because the batter gives the chicken nubs a fluffy, savory exterior. The sauce robbed it off much crispy texture, but these sauces made up for any loss of crunch worth it. The three new flavors, in order of my preference:

1. Golden BBQ: imagine a BBQ sauce combined with honey mustard. It’s creamy, sweet, and has a bit of tang. It tastes like a backyard BBQ, but in crispy chicken form.

2. Garlic Parmesan: Sharp, nutty cheese combines with bold, aromatic garlic for a flavorful bite. And though the garlic is present, you don’t need 18 breath mints after eating these.

3. Sweet Chili: it’s mostly sweet, but if you look for it, there’s a little heat on the back end.

The perfect thing to wash it all down was Runza’s new Dr. Pepper Shake, which combines the creamy richness of ice cream with the soda’s fruity, vanilla flavor.

Runza already serves some of fast food’s best burgers, sandwiches, and ranch dressing. Now we can add fried chicken to that list.
