It Was cheesemaking Day, Fire or no Fire. Here’s the process: heat milk to 89, put culture in, wait 45 minutes, then add rennet & wait 30 minutes. Reheat to 102, siphoning off whey. Hang the curds for 2 hours, then put curds into the mould & press. Many details and aspects are discussed in the full workshop. Next time…..
