Good evening!

Good things keep happening at Swan Holler.

Since our last posting the head brewer completed installation of all the tap lines inside the walk-in cooler. The taps are ready.

We picked up the bar top. Final installation will look great.

This week Our CO2 tanks were installed and the head brewer finished installing the brewery’s CO2 system needed for brewing, kegging, and serving at the taps.

This week we also received the final chemicals needed to start preparing the brewery for brewing. I’ll skip the techno-speak. Today, we started the chemical treatment and sanitization process. That process will take several days and then Swan Holler will be ready for the first test brew!

As a side note, Inspired by ten years of home brewing, three years ago we planted hop plants on our property. Hops are a key ingredient in brewing b**r. They are utilized to add bitterness as a balance to the sweetness of the malts and they also add aromas to the various b**r styles. It is always amazing to watch the hop buds develop. FYI - UT has started a program to promote hops as a possible cash crop for TN and we would like to support that
research.

The photos that I have attached are of our Hops. The hop buds are used in brewing and they are looking good. In the background is the actual Swan Holler as seen from our cabin. Also in the background some of our hummingbird friends can be seen.

Good Morning!

Quick update! Things keep moving ahead at Swan Holler and an opening date (TBD) is getting closer.

The interior walls are up and we’re taping and mudding in preps to start painting next week.

Work has started on the bar area. The chalkboard surface is installed above the taps. The Head brewer installed taps in the tap wall yesterday. Bar top is getting picked up tomorrow. Bar shelving is being installed. Dishwasher gets delivered next week as does our CO2 / brewing gas service.

Tap room lights are installed and on!

Curbs were painted and look great! Thanks Volunteer Sealing and Striping who also did our parking area!

As a reward for the hard work, we treated ourselves to Vegas Dogs from East Coast Dawgs - now open for business at Swan Holler. JB will be open Fridays, Saturdays and Sundays from noon until 5 until the brewery opens and then open when the brewery is open. SOOO good!

Good evening!

Check off another milestone as we move closer towards opening. This weekend we finished all the interior electrical work and passed our rough in inspection today! That enables us to finish the interior walls, painting, lighting, and plumbing. That's big!

This past weekend East Coast Dawgs quietly opened for food sales at Swan Holler Brew Project. Needless to say, we indulged ourselves in East Coast specialties for lunch! The good news is that East Coast Dawgs will now be officially open from noon until 5:00 pm on Fridays, Saturdays, and Sundays.

As another day draws to a close, we are one day closer to opening.

Good evening!
Another BIG milestone was accomplished over the last two days.
We powered up the brew house for the first time and tested all the controls and functions! All worked as expected. Water was boiling in the brew kettle - a wonderful sight!

Thanks to Josiah Turner and Junction Services for getting us the power so that we could finally bring the brew house to life.

Next up, and over the next several weeks, install new seals, passivate the stainless steel system, sanitize everything, and complete final testing prior to brewing.

Good evening Swan Holler Followers!
I hope that everyone had a safe and wonderful America’s 250th holiday.

Things continue to happen at the brewery.

While work continues inside the brewery (plumbing is roughed in, electrical rough in almost done, glycol system ready for startup, AC system and walk-in cooler both operational) work is moving outside.

Most recently, the team at Volunteer Sealing & Striping worked thru the heat last week to bring the parking lot to life.

Today, our partners at East Coast Dawgs arrived on site and began preparations to open shop later this month! Check out their page!

BIG day yesterday!
The professionals at Plateau Electric connected power to Swan Holler Brew Project.
Thanks PEC!
Thanks also to my electrician (and son-in-law) for all the effort to get to this point.

We also finished installing metal for a chair rail in the taproom and serving areas. Thanks to my sister and brother-in-law for spending a week and a half with us to work on the brewery! That was huge!

Interior electric work continues so we can get our inside inspections done and fire up the brewery!

Happy Friday followers!

Been a busy couple of weeks.

Bruce Perkins and his team from Legacy Refrigeration installed our walk-in cooler.

The glycol system has been pressurized.

We completed our service release inspection for power to the brewery. That clears the way for Plateau Electric to bring power to the building.

We started finishing the bar and started putting up the metal chair rail in the serving area.

Thanks to my brother in law, who came down from Illinois to specifically work on the brewery, all the walls have been insulated and are ready for the final treatments.

When the rain stops, Dakota Smith and Volunteer Sealing and Striping will seal and paint the parking lot.

Please feel free to stop in and meet us if we are working at the brewery.

Swan Holler is getting closer every day.

As I close, as we all enjoy this weekend with family and friends at barbecues, at the pool, on the lake, or hiking through BSF, please take a moment to remember the significance of Memorial Day and honor those who have made the ultimate sacrifice defending what we hold so dear.

Good evening and Great news!

After several months of searching, Eastcoast Dawgs, operated by John “JB” Mengler and Rich and Kari Vollenweider, have announced their decision to relocate their business from Seiver County to Oneida and the Swan Holler Brew Project!

Eastcoast Dawgs, and retired executive chef “JB”, will bring years of food industry experience to Oneida and a menu that provides big city variety and flavors.

Stay tuned for the posting of the core menu and Grand Opening dates.

Good evening Swan Holler followers!

We got some good feedback this week that we haven't done any updates recently. Well, it has been a while since the last update but we haven't been idle!

Since last we updated, several big milestones have been completed.

First, the glycol system piping, which provides cooling for our fermenters, has been installed and tested.

Next, the tap wall and bar area have been framed out and are ready for finishing. Related, the tap wall separating the brewery area from the serving and bar area has been prepared for installation of the brewery's walk in cooler which will be installed next week.

Electrical work continues.

Finally, we have finalized a partnership with a food vendor - More to follow in our next posting!

Thanks to all the folks who have stopped in to visit while we' have been working at the brewery. All are invited!

Good evening, Swan Holler followers and a very Happy Easter weekend to you all!

Lots of progress since our last update!

- Service panels that provide power to the building are installed and ready to be inspected.

- Pipe support trays have been set and ready to install glycol piping.

- Framing of the bathroom, kitchen, hallway and tap walls is essentially done.

- Walk-in cooler sections have been brought on site.

- All the brewery equipment has been set in location.

There is still a lot to do, but the punch list is getting smaller!

Thanks to Jamie McCann of McCann Handyman & Building for finishing the gable walls and to Josiah Turner of Junction Services for the electrical work so far. A final thanks to Stephen Chiappisi, who traveled from NC to visit family and work at the brewery for a week!!

I had the pleasure of meeting Mike and Erica, who stopped in today to check out the brewery.
All are welcome to stop in if we are working at the brewery to see where we’re at firsthand and maybe learn a little bit about Swan Holler.

Next up – electrical installation, glycol system construction, and walk-in cooler assembly.
