Good evening!
Good things keep happening at Swan Holler.
Since our last posting the head brewer completed installation of all the tap lines inside the walk-in cooler. The taps are ready.
We picked up the bar top. Final installation will look great.
This week Our CO2 tanks were installed and the head brewer finished installing the brewery’s CO2 system needed for brewing, kegging, and serving at the taps.
This week we also received the final chemicals needed to start preparing the brewery for brewing. I’ll skip the techno-speak. Today, we started the chemical treatment and sanitization process. That process will take several days and then Swan Holler will be ready for the first test brew!
As a side note, Inspired by ten years of home brewing, three years ago we planted hop plants on our property. Hops are a key ingredient in brewing b**r. They are utilized to add bitterness as a balance to the sweetness of the malts and they also add aromas to the various b**r styles. It is always amazing to watch the hop buds develop. FYI - UT has started a program to promote hops as a possible cash crop for TN and we would like to support that
research.
The photos that I have attached are of our Hops. The hop buds are used in brewing and they are looking good. In the background is the actual Swan Holler as seen from our cabin. Also in the background some of our hummingbird friends can be seen.
