We have had a few sightings/ visitations of these beauties. I respect and appreciate their presence and the good work they do in our local ecology. They also help me be more aware and present with all the life around me instead of living inside my head. Timbers seem to have a quiet disposition. They don’t chase, but pounce. They seem to be content to share the space since their primary niche is cloaked predation. Historical settler farming practices are built on a worldview of control, domination and extirpation. But it doesn’t have to be that way. I think the world is always asking us to widen our hospitality.

Cottage bacon is sliced, smoked Boston butt. It’s a leaner bacon…think cured, smoked pulled pork but bacon style!

More on this over the next twenty years, but we are planting trees. Chestnut, black walnut, poplar, black locust, honey locust, willow, apple, peach, persimmon, pawpaw and more. Getting some first lines in this year. Pigs and mulberry. Chickens and persimmon. Cows and locust. Sheep and all of the above:) thanks to for many of these beauties!

Look at these beauties! We tend to talk about marbling only with beef steaks, but heritage pork husbanded on pasture and forest will give you an amazing marbled chop. These babies are 1.5” thick. We’ve got boneless and bone-in. Come get one for the weekend or make a habit of it with our CSA monthly service.
