Itās been a while, so we figured it was time for a re-introduction !! Weāre Jacob & Gabi ā the husband & wife duo behind Banditos.
Banditos is, more or less.. what happens when a folk artist/pitmaster and a sign painter decide to open a Tex-Mex joint. š¤
Weāre originally from Columbus, GA, spent most of our twenties in Nashville, and eventually made our way back south to get closer to family while starting one of our own (shoutout to Bandit, our firstborn and who we named this whole thing after)!
Banditos started about three years ago as a little pop-up at Scott Peek in Waverly, AL, where we were slinging tacos made with chicken we raised and processed ourselves. From there came a weekly takeover at Plaza Bar & Lounge, then the food truck, and now, somehow, a brick & mortar in Opelika.
These days youāll probably find one of us tending the smoker, running drinks with a baby strapped to us, or bussin tables.
A lot has changed since those early Chicken Man days, but Banditos is still very much the two of us ā our food, art, music, a nod to the places weāve loved, and all the weird things weāve collected along the way.
To those of you who have been here since the OG pop-up days.. yall some real ones.ā¤ļø and for those who are just now joining the famā¦ we canāt wait to feed you!!!!
