Here’s a quick meal idea for about 10 bucks give or take, counting the onion, bellpepper and rice. Our style of cooking revolves around being resourceful. Large families learned to stretch meat by making a rich gravy to spread over rice. Although we are way more fortunate nowadays to live in abundance, the techniques remain the same. It never ceases to amaze me how deep of a flavor profile can be built with relatively few ingredients.

We kicked off blackpot season at the Ponderosa Posse trail ride and cookout this past weekend in Plaisance, Louisiana. I was asked to help out with cooking, so I broke out the classic twenty gal pot to cook down some deer, wild hog and smoked sausage in a gravy. It had to be at least 40lbs of meat in that pot. 😂 There were many other great cooks there with dishes including hen sauce, smothered beef short ribs, Slum, bbq chicken, smothered rabbit and fried chicken along with red and white beans. This event truly captured the essence of our culture. Good people, good vibes and good food. All thanks to the most high for allowing me to use my gift to serve others 🙏🏾🙏🏾

I can’t say our tasso is award winning because we’ve never put it in a contest but what I can tell you is that it goes as fast as we take it out the smokehouse

Working on a deer/wildhog gravy this morning in the classic 20 gal. This cool weather has officially kicked off blackpot season. Let’s go 🔥🔥
