So much flavor in this chicken enchilada soup! So soothing on a cool day. Can substitute the meet for vegan style.

1 chopped bell pepper
2 stalks chopped celery
1 medium chopped onion
6 cloves chopped garlic
1-2 cans enchilada sauce
1-2 lbs chicken thighs
1-2 packs taco seasoning
1 package frozen corn
1 can black beans
1-2 can green chilies
1 can diced tomatoes
2-3 boxes chicken stock
cilantro, sour cream, and tortilla chips for topping

Season chicken thighs or vegan meat with taco seasoning. Save a little extra for the broth. Add in bell pepper, celery, garlic, and onion. Saute until chicken is almost cooked through and veggies are almost soft. Add tomatoes and chilies and saute for another 1-2 minutes. Add broth and scrape goods off the bottom of the pan.
Season to taste with the taco seasoning and bring to a boil.

Let boil on the lowest heat possible, color will deepen. Add in frozen/canned corn and beans the last 20-30 minutes of cooking. Serve in bowls topped with a dollop of sour cream, cilantro, and tortilla chips.
