RHUBARB… Screams Spring! Made a delicious pan of crisp with my fresh rhubarb… So warm & delicious😋😋Anyone else out there love the tangy, sweet flavor of rhubarb? It’s a family fav!
Here’s what to do…
• Grab a cast iron skillet or baking pan… Fill with chopped rhubarb… about 5-6 cups.
• Transfer to a bowl & add 1/4 cup flour, 1 cup sugar (I use 1/2 brown), 1/2 tsp cinnamon & a pinch of salt. Stir well & put back in skillet or pan.
• Cut together… 1/2 cup flour, 1 cup rolled oats, 1/2 cup brown sugar, 1/2 tsp cinnamon, dash of nutmeg… pinch of salt & 1/2 cup cubed cold butter. Spread on top of rhubarb & bake for 35-40 minutes… till golden & bubbling.
• Scoop warm into bowls with ice cream or whipped cream… ENJOY!!
