‘SO FIN-TASTIC! ‘… Teriyaki Grilled Salmon with Rice & Zucchini!
After a day of digging in the dirt… We deserved a delicious dinner! Super easy too! I LOVE salmon…You too? Grilled to perfection… 😋
Super easy meal… ready in minutes! So delicious!!
Here’s what I did … It’s a SAVER!
• Seasoned two salmon fillets with garlic & onion powder, drizzle of teriyaki sauce & a couple grinds of fresh pepper.
• For rice… Combined 1 cup jasmine rice with 2 cups water & a tsp of salt. Brought to a simmer, reduced heat & cooked for 12 minutes. Let rest for another 10 minutes… Fluff!
• To grill salmon… Placed in hot 600 F grill on a grill pad for 5 minutes, top side down. Reduced heat a bit…Flipped & grilled for another 5 minutes to tender perfection … Grill a few minutes longer for a more well done fillet.
• Meanwhile… Roasted zucchini & onions in a hot 400 F oven for 15 minutes … Can steam too …Crunchy results…
• Plate your meal… Drizzle salmon with a little extra teriyaki… ENJOY!!

I LOVE SOUP… Especially Tomato Soup! This pot is Amazing! Tomato Basil base stuffed with veggies & baby pasta… WHO Agrees?? 🍅🤪😋🥰
Started out making a big pot of Tomato Basil Soup… Decided it needed a few extras. Chopped zucchini, sliced carrots & spinach… along with the traditional soup starters onions, garlic & celery.
Here’s what I did … Followed my recipe for Simple Tomato Basil Soup by sautéing onions, garlic & celery in olive oil. Added tomatoes, chicken broth & tomato juice… Added a few handfuls of frozen basil…Blended all with my hand emulsion blender until smooth. Seasoned with salt, pepper & Parmesan cheese to taste along with 1/2 cup 1/2 & 1/2 …
Then added 1 small diced zucchini, 3 sliced carrots & 2 cups dry ditalini pasta. Simmered until veggies were tender crisp & pasta al dente… Added 2 cups chopped spinach… Simmered for a few minutes & seasoned with a little Italian seasoning… Thick & rich…SO GOOD!

RHUBARB… Screams Spring! Made a delicious pan of crisp with my fresh rhubarb… So warm & delicious😋😋Anyone else out there love the tangy, sweet flavor of rhubarb? It’s a family fav!
Here’s what to do…
• Grab a cast iron skillet or baking pan… Fill with chopped rhubarb… about 5-6 cups.
• Transfer to a bowl & add 1/4 cup flour, 1 cup sugar (I use 1/2 brown), 1/2 tsp cinnamon & a pinch of salt. Stir well & put back in skillet or pan.
• Cut together… 1/2 cup flour, 1 cup rolled oats, 1/2 cup brown sugar, 1/2 tsp cinnamon, dash of nutmeg… pinch of salt & 1/2 cup cubed cold butter. Spread on top of rhubarb & bake for 35-40 minutes… till golden & bubbling.
• Scoop warm into bowls with ice cream or whipped cream… ENJOY!!

Simple Deliciousness! My hubby loves Carbonara… Decided to whip up a quick batch with what I had in my kitchen! Ready in minutes!
Here’s what to do… It’s a SAVER!
✨While you boil your spaghetti…Don’t break it in half!
• Cook about 4 ounces small cubed Spam or ham in olive oil til golden… Add 1/2 diced onion & 3 cloves minced garlic & sauté until slightly browned.
• Drain pasta & reserve ~1/4 cup water. Add pasta to meat mixture, season generously with pepper, a little salt & stir well. Sprinkle in ~1/2 cup peas.
• Slowly blend cooled pasta water with egg… Pour over pasta with 2 tbsps Parmesan… Blend to thicken & coat pasta.
• Combine an extra 2 tbsp cheese on top … Add a few red pepper flakes if desired… ENJOY!!

Living the sweet life…One dessert at a time’ 😋🥰
Can we bake something Grandma??Spent the weekend with my grandson over weekend! Asked him what kind of cake he wanted to make together & he chose sprinkle cupcakes … Decided a small batch would fit the occasion! Tweaked a recipe that made the perfect results by Frosting & Fettuccine ! So delicious!! 😋
Here’s what you’ll need for about 9 cupcakes!
• 2/3 cup butter
• 1 cup granulated sugar
• 2 large eggs
• 1/3 cup milk
• 1 tsp vanilla extract
• 1/4 tsp almond extract
• 3 cups all-purpose flour
• 2 tsp baking powder
• 1 tsp salt
• Mix egg, milk, vanilla, oil & salt together.
• Add dry ingredients & whip well with a wire whisk for 2 minutes. Add 1/4 cup sprinkles.
• Using an ice cream scoop, portion into paper liners.
• Bake for ~18 minutes in a 350 F oven. Allow to cool on a wire rack.
• Frost tops with vanilla frosting & a few sprinkles… I used a 1/2 open can of frosting my daughter had in the fridge ☺️ or make your own homemade .

Yum!! Also found frozen sugar cookie dough from my last visit & baked those too!
