- higher natural acidity
- citrus, green apple, tighter structure

Warmer growing conditions (like in California, Australia, New Zealand, southern Italy) have
- faster ripening
- lower acidity
- pear, stone fruit, broader texture

So look at the label for the location of the winery to consistently pick your favorite!
