If u want to get good at something, u gotta start even if that means messing it up. I smoked my first brisket 10 years ago and it sucked. Not enough bark, under done since I was rushed to serve it and dry as asphalt in the summer. But, we still ate that brisket and looking back, at least it didnt cost $80 like nowadays. My love for cooking brisket has never faded and while they're more expensive now, my skills make it more than worth the extra cash.
*Slide 1 - The Green Jacket = Brisket, Pimento Cheese, thin sliced Sweet Onions and GDP's (Garlic Dill Pickles) on a Cuban Bread Bun. Sauce on the side because the sauce only compliments the flavor, trust me, it ain't needed
*Slide 2 - Brisket 1/2lb = Assorment of Housemade pickles including GDP's, PRO's (Pickled Red Onions), PJ's (Pickled Jalapeños) and thin sliced Sweet Onions served with a Cuban bread bun and choice of bbq sauce
