est of dining and life experiences and enjoying the camaraderie of friends at dinners and events. The tradition of the royal guild of goose roasters of 1248 was revived in Paris in 1950, and we now carry on those traditions.

“January 11, 1976 was the birth of the 38th Baillage of the Chaine de Rotisseurs. It took place at a magnificent dinner in the Maison et Jardin in Orlando, Florida. Robert Uttal, who organized the Chapter was inducted by Bailli Deleque Roger Yaseen supported by this predecessor, Zenon C.H. Hansen, Membre du Conseil d’ Honneur.” So reads the first article in a Chaine publication for the Orlando Baillage. The Orlando Chaine has had over two hundred events of all kinds from masked balls to hoe-downs. We’ve traveled by bus to Berns Steak House in Tampa; by boat to an enchanted island in Cypress Gardens for a shipwreck party complete with pirates; by a 400 ton steam engine in private railroad cars to Ybor City for a gourmet picnic; dining to a private performance of "Phantom of the Opera" and by helicopter to our home in New Smyrna Beach for a luau with a steel drum band. Its officers have been General Managers, Owners. Executives, Food Critics and even Housewives, of which I am one and the Bailli now since 1980, when my husband, Robert, was appointed to the National Executive Board.

The Delicacies at The Chapman (Winter Park, Florida)

The reenvisioned Chapman restaurant is one of the oldest restaurants in the Winter Park area of Florida. Once the hangout of "the wealthy and powerful men visiting Florida from the Northeast to escape the cold," it is now one of the charms of Winter Park, Florida.

We were pampered by the staff and crew at the Chapman, as the Orlando Baillage restored us as we continue on our culinary journey. The Chef incorporated the native Florida abundance of food and beverage as we indulged for the evening. Chef Scott Copeland and his team gave us a wonderful culinary delight for the evening. One of the special treats of the evening was a raffle of wine that was from our last gathering we had. Our last Mondiale event, where we presented and tasted wines from Tim’s Wine Market in Orlando, Florida. Lucky attendees who joined us again at this dinner won a bottle of wine from the event.
Bailli Stephen Chun welcomed us all to the second dinner of the season. Chef Scott prepared a graciously paired meal for us all. After our hors d’oeuvres, we started with Chef Scott’s rendition of a jumbo lump crab cake. Succulent morsels of lump crab perched upon Florida Sweet Corn and dusted with toasted panko. Served alongside some ancho remoulade. It was light and a nice contrast between the meaty crab and sweet Florida corn.
Our second course was Pork Tenderloin. served over polenta amarena. This beautiful dish was a maze of flavors and textures that was a delight. Chef served an Amerena cherry wine reduction that balanced out the rich pork. The fun part of the dish is the lion's mane mushrooms. As they are raw, they have a fuzzy, almost furry-like feeling and appearance. Cooked, they are firm and meaty. Serving the Amarena cherry on the dish was, well, the cherry on top! For the intermezzo, we had a bight of melon granita- a shaved ice, topped with a fine chiffonade of mint.
A display of amazing tastes and textures comes alive in our next course. A beautiful plate of sliced Mayu8ra Station Wagyu Strip. The intricate plating included tender, melt-in-your-mouth sliced Wagyu tenderloin, curated salt, seared cippolini onions, roasted toybox tomatoes, and crispy gaufrettes. All this served with a shiitake gravy. This plate had a beautiful and playful presentation.

Just when you think your taste buds are as happy as they can be, next comes the dessert course. A Velrhona Chocolate flourless chocolate cake that just melted in your mouth and rounded out the whole evening.
The Chapman was such a delightful experience; it is definitely going on our regular dining experience list.

Our lastest gastronomic adventure was at Leiah's, Orlando. Such a great time was held by all. We were treated to a six-course tasting menu was sophisticated and unpretentious, reflecting the philosophy and vision of Chef Torres.

We began with an amuse bouche of Florida crab, followed by a velvety smooth lobster bisque. The third dish was a delicate beet and goat cheese salad with honey tuille, followed by a sublime, hand-made Parmigiano Reggiano tortellini, a crowd favorite. Our next course was a delicate sea bass, shaped like a fish and enveloped in thin slivers of courgette, giving a nod to the fish’s original form. The chef’s teams’ attention to detail was greatly appreciated by the guests, and this dish tasted as beautiful as it looked. The fifth course, the pièce de résistance, was the prime tenderloin; so tender that one could practically cut it with a fork. The meal concluded with a Cabernet pear with mascarpone and dragon fruit to round out the evening.
It was a highly successful wine dinner that was well attended by members from the Orlando Baillage, the Space Coast Baillage, and new, prospective members.

We had a great social at Tim’s Wine Market in Windermere. Wine was expertly paired our tapas as we experienced whites, reds, and bubbly from around the globe. This was such a great social event to sit and enjoy some wine and food with our friends.

Our Florida Fall dinner was held at Norman's New World Cuisine, just off the beaten path of our tourists. In a private dining room, we were able to experience fabulous delights to the taste buds and wonders to the eye. We dined on the Chefs' fabulous creations such as reimagined Fried Green Tomatoes, Key West Yellow Tail Snapper and decadent desserts of Chocolate Creme Brulee and Tres Leche Cake. Wine was carefully selected and paired for our enjoyment.

Our New Orlando Bailliage Pin was also presented to our Vetern Bailli Muriul Uttal for all her years of service and dedication to our Balliage. A very fulfilling evening of great food and camaraderie.
